  • Recipe for pizza, with 60% water, with a rise at room temperature for 24 hours. The dough is suitable for baking pizzas in the home oven as well as in an outdoor pizza oven. Prepare this pizza recipe a day ahead to keep the dough fluffy and light.
    For three pizzas you need :
    500 grams of pizza flour "00" with gluten content "W 230-280" (mine has 250)
    300 ml of room temperature water
    15 grams of salt
    8 grams of fresh yeast
    1 teaspoon of olive oil
