As a former butcher that 60% of what i processed was wagyu, yea, i've seen top round with marbling even more pronounced than that. Grade 12 bms, scoring 69.67% imf. Never seen beyond that though. I've heard of scores exceeding 72% before, but never saw it in person.

(It was in fact more square than use to so wanted even cook) Then seared it off on hot iron. Sliced then with kosher salt to lightly dip It was more delicious than I was able to imagine. Inexpensive cut packed with expensive taste.
I love the beautiful, sharp knife. I saw my late grandfather butcher beef and huge hogs way back when. Nothing wasted, nothing fancy, but large family never went hungry. Thanks for this great video. ❤❤❤
@fez877 So the story behind it is super interesting. Long ago, Wagyu was only in Japan, but eventually some cows got transported to Australia. Over years of breeding, Aussie Wagyu and true Japanese Wagyu became slightly different. But it is true that Wagyu, by definition, has to come from a Japanese cow. There's actually a Food Theory alp about Wagyu if you want to learn more 😁.
@fez877 Oh, also (sorry this is a lot) the reason I said Aussie wagyu is because, to me, Aussie wagyu has less marbling. Still a lot of marbling, but not as much as we see in Japanese Wagyu.
