  • Alouda is a delicious cold beverage made with milk, basil seeds and agar-agar jelly which is especially refreshing on a hot summer day.

    Ingredients:
    1L Whole milk
    1 Can Evaporated milk (345 ml)
    1/2 Can Sweetened Condensed Milk (150 ml)
    Rose Water
    Red Food Colouring
    5g - Agar Agar
    Water - 1 1/4 Cup
    Sugar
    Few drops of Red Food Colouring
    2 TBSP Basil seeds
    1 Cup Water or more
    Serving:
    Ice Cream
    Note:
    Why boil the milk when making alouda?
    To make the alouda rich and creamy, milk is boiled until it reduces and thickens slightly. Then it is chilled and used. However you can get the same taste by using 1 extra scoop of ice cream in each serving glass.
    For this recipe, it is not necessary to boil the milk. You can just mix the cold milk with condensed and evaporated milk and serve.
    How to bring milk to a boil?
    You need to be very careful while boiling milk, as milk burn easily at the bottom and makes lumps. On a medium heat and in a heavy bottom pot, bring the milk to a boil then remove from heat immediately.
    Vanilla alouda - Yellow food colouring + vanilla extract
    Almond alouda - Green Food Colouring + Almond extract
    If possible skip the food colouring as they are not good for health. Instead you can use fresh crushed strawberry, mangoes, kiwi etc... to give flavour and colour to your drinks.
    Can i use syrup instead?
    Yes, you can use syrup but the recipe will be different. As syrup already have the food colouring, rose water, and sugar. Thus, you need to skip sweetened condensed milk, rose water and red food colouring.

    Tried the recipe today. . I tried to add some extra things like elaiti, vanilla essence and milk powder. . It came out like kulfi 😁. . But tasty though. .
