When they know who you are they become jealous of you because you still know how to build, mine, craft, break, grief, troll, (etc) so they attack, thinking that they will gain knowledge of those things when they are done with you. The backstory of the enderman is just a little bit sad.
My theory is that the endermen lost their humanity over time, and became more like animals, but having the intelligence of a human. So I think the endermen think that having eye contact is a term of intimidation, so they get angry and aggresive at you to assert more dominance over you.

Its because they have the souls of the ancient builders. Their souls are still in there. Some went to the end where they became endermen. When they came back their family was scared of how they looked and didnt recognize them, so they ran away. The endermen became so sad.
