  • Homemade Tasso in a homemade smoker.
I love to make my own tasso, and use it as a seasoning meat several other dishes. N some areas it is called tasso ham. In this video demonstrate an easy recipe to make your own right at home. You can use any barbecue smoker to make tasso. As long as you can keep low and steady temperatures in it.
    #Flavoryourworld #UDS #Ugly Drum Smoker
For more videos on how to make and use tasso see this play list. • Tasso Recipes
Tasso seasoning recipe should make plenty of Tasso at least 4-5 pounds of pork but meat cut into lean strips
    Wet cure:
    •½ cup Worcestershire sauce
    •1Tbs Tabasco Sauce
    Dry Cure:
    •1oz Morton’s Tender Quick
    •1oz table salt
    •2oz cayenne pepper
    •2oz black pepper
    •3½ oz garlic powder
    • 1 Tbs of onion powder.
Brush meat with wet cure. Then sprinkle on seasoning cure mix liberally. Place in bag or covered container and refrigerator for two to five days. Turn meat over at least once a day.
    Then smoke between 175° -225°F (I like 212°F) for 2½ - 4 hours until the Tasso is about 155° -160° internal temperature.

Big Lew! I made this today on my UDS following your instructions to a tee, and it came out damn delicious. While I’ve never eaten it before, there’s no doubt in my mind that this bacon like, salty, spicy, Smokey meat could make just about anything taste better. I used oak for smoke with regular kingsford briquettes, and held 190-210 for the first 3 hours, and maxed to 225 on the last hour.

I love to cook stuff with Tasso. I’ll be making red beans with some tomorrow. Glad you enjoyed it. You can make it country style ribs too or any other cut of pork but meat., The pork steaks are thin and easy to work with and don’t take too long to smoke or cure.

A few days ago I cut out the coppa muscle to make a capicola. I was thinking what the heck am I going to do with the rest of this pork butt. Brain cells out of nowhere I remembered this video. Cured 5 days and it's on the smoker as I type. Thank you and I wish you a much better 2021 and beyond.

Wow thank you, Commeaux ça va? Yes if I recall you marinated yours. This simple recipe is inspired by and derived from Chef John Folse's recipe as listed here; www.jfolse.com/recipes/meats/pork31.htm . Thanks man I appreciate you watching.

@@BigLewBBQ I'll tell you another way to use it that I haven't seen anyone do. It was popular in the 70's & 80's, the older people used to dice it and add it to rice before you start cooking it. The rice came out smoky and flavored from all the seasoning. My Dad would make a pot of rice like that and eat it with over easy eggs for breakfast but it was good with any rice and gravy dish. I also like to use it when I cook shrimp or crawfish fettucine. Give those a try and I'm sure you'll like it. Rob

    • @BigLewBBQ
      @BigLewBBQ  Před 3 lety +1

@@PrimalCajun I will. I’ve used it shrimp and grits before. So reckon it would be excellent in shrimp fettuccine.

Use it as a seasoning meat. Greens, cabbage, beans, jambalaya, gumbo, gravies, sauces, dips, stews, etc. You can dice it small and use it as a topping for pizza or baked potatoes. Use it in just about anything that might call for diced ham or bacon bits or pieces. I suppose you could eat it as a snack food like jerky, but it is really salty and spicy.
