mitzis design is inspired by queenie from the wolf pack 5, which was originally a fox and what aaron fechter wanted in the RAE, but the higher ups at showbiz wanted a mouse character due to the popularity of cec and disney's mouse characters. so fechter compromised and repurposed queenies design to create mitzi and most likely the higher ups wanted a va similar to minnie mouse
Her original name was "Mini Mozzarella" too. It should also be noted that this was recorded before Mitzi's regular voice actress, Shalisa James, joined the crew, so Monique Danielle plays her here.
