Pizza Salad
3 ROMAINE LETTUCE HEARTS, SLICED
1 LB. ITALIAN SAUSAGE, SWAGGERTY'S FARM
1 PK. SMALL GRAPE TOMATOES, HALVED
1/2 CUP MUSHROOMS, FRESH SLICED
1/2 CUP PEPPERONCINI'S, SLICED RINGS
12 OZ. JAR ARTICHOKE HEARTS, CHOPPED
1/2 CUP BLACK OLIVES, SLICED
2 TBSP RED ONIONS, CHOPPED
1/4 CUP COLOR BELL PEPPERS, CHOPPED
1/2 CUP PEPPERONI, SLICED OR SMALL SIZE
1 CUP OF PEARL MOZZARELLA BALLS
1/2 CUP OF PINEAPPLE CHUNKS, OPTIONAL
2 TBSP FRESH BASIL, CHOPPED
PARMESAN CHEESE, GRATED
ITALIAN STYLE CROUTONS
Note: all ingredients are optional
Brown the Italian Sausage, drain on paper towels and set aside. Chop the Romaine lettuce into small pieces and place the lettuce in a large bowl. Add tomatoes, mushrooms, pepperoncini’s, olives, onion, peppers, pepperoni, pineapple, and Italian sausage. Toss ingredients together well.
. Top with mozzarella, parmesan, basil and croutons.

I live in the Chicago land area, there was a pizza restaurant that used to serve a salad pizza. They would cook thicker pizza dough (which was like a thin bread not like a crunch crust). Then they would top the cooled crust with a Greek salad ( lettuce, feta, onion, olives, spices. Then you’d top it with Greek dressing. It was the best thing on the menu.
Looks refreshing. I bought some Olive Garden dressing but haven’t tried it yet.

What a great idea for the summertime! I'd definitely feel better eating a pizza salad than eating a slice. No matter how thin the crust is, aside from the carb crash, I just feel so blah for the rest of the day. Thanks for this, Tammy! By the way, I ordered that red hand blender I saw you use. It is the *best* hand blender I have owned since my mom's 70's (?) one had the biscuit. God bless.

I think I’d use 3or 4 shredded cheeses which would include mozzarella and Parmesan , most of what you have on your salad and serve it with a creamy tomato basil dressing . Yummy recipe!!

i use the freezer hack for peppers and onions and zucchini and any left over pumpkin and things that will freeze well so its pre chopped.

I have never cared for Italian food. Everything tastes the same! Greek food is so much better!!!
