If you add a short teaspoon of protein powder (egg white or milk), it'll help keep the bubbles in the batter. Can also add a pinch of baking powder so it create a bit more bubbles during the cooking.

Hello. I cannot get the creamy solid of the mixture of meringue and batter. When I put batter in, it becomes yellow and liquide so the thing cannot hold still in the pan and it becames flat. :( Is it becuase I need to mix them quickly?

Oh, you must have been upset because it burned down even though you made it hard. I'll tell you the reasons for my failure first. 1. Did you use the perfect lid? Souffle pancakes are cooked over low heat 🌟 Steam 🌟. The pot lids are all standardized, so if it's the size, a lot of steam will be drained and the side and top are not fully cooked, so the cake might have turned off. If you're using a lid, close the hole in the pot lid with wet tissue. 2. Turn the heat to low heat. If you have strong, medium, or low heat, try baking it over low heat. (It's not a button to control the heat. Look at it with your eyes and control it.) 3. Bake it in a preheated pan. 4. Grill it for 4 minutes and see if it's cooked well. Please decide whether to grill it more or not. 5. The well-baked souffle starts to turn off as soon as it gets off the pan. So when I filmed the video, I put cream on the plate and cut it, but the last video was turned off. 6. If you flip it over, it might be because the batter is cooked. This is a great recipe, I recommend not mixing the batter too much or blending it since then it would be runny and wouldn't be fluffy
