Color scheme is strict, one unsigned byte is 0~255, if one square represents one byte then there should be max 255 color variants, color is built from RGB, which is 24 bit integer, so there can be big space between each color, and so algorithm can easily determine the byte value. But of course I could be wrong and the video was built with some optimal algorithm, which is unreliable because of YT's compression as you said.

I remember seeing a repo on a tool that could encode files as a video and losslessly retrieve back the data. Forgot the name tho
