    Love the guidance. Don't love the recommendation to use so much salt! If you score your chicken and sprinkle the juice from a lemon on it, then let it sit in the refrigerator a bit, that lemon juice will penetrate the chicken. Then when you add seasonings (herbs and spices and NOT more salt!), it will be amazing.

    Doesn't salt dry the chicken(proteins in general)out if put on before cooking, and in turn,also make meat tougher?
