How to make RAMOS GIN FIZZ by Mr.Tolmach

- Ramos Gin Fizz recipe:
Lemon juice - 15 ml
Lime juice - 15 ml
Sugar syrup - 25 ml
Orange blossom water - 2 drops
Vanilla - a small pinch
Gin - 50 ml
Egg white - 15 ml
Cream - 25 ml
Sparkling water - top 20-40 ml
Dry shake first, than shake it very hard and long. Garnish it with lemon peel and drink immediately;)

Rick S Why you have to dry shake it?
Alex 5401 the bubble will be created when acid from citrus mix with protein from egg white and blend with the air. You maybe not need dry shake if you shake long enough but when dry shake you create foam easier when not add water from ice in.

I worked almost 2 jears in a cocktail bar and i loved it. The music the feeling the work u do, how fast sometimes u can do stuff. When i watch ure footage i really wanna do work as a barkeeper again man.

Я с начало наливаю соду в пустой стакан, а затем коктейль. Лёд не нужен. Лёгким постукиванием по дну мы выбиваем пенку. И получается что-то типа столба воздушно-молочной пены выходящего из стакана. Кстати, лучше использовать коллин. В середину вставьте трубочку( лучше железную, с ложкой на конце) и твист апельсиновой кожуры сверху. Только не выдавливайте масло из кожуры, можно повредить пенку. Попробуйте этот способ, не пожелаете. Удачи вам!

Yeah this is a watery version. Should be shaken much longer
The traditional one is heavy cream and more egg white, equal parts 1 oz of each, that's what gives it the foamy top

At my bar we typically top it with carbonated tonic water and that helps the emulsified eggs rise out of the glass and stay as mass. have you ever heard/seen this?
