3e Sorcerer never fit the description. They should have at least more weapons proficiencies, possibly more HP and skills. Low HP solved in table top by adding Con score to initial character [Con Score + Con Mod + Hit Die]. I did this in an overhaul of 5e. Not sure why this has never been done before. The DM simply needs to add a few HP to low encounters.
For video games: Edit 'classes.2da' [extract with NWN Explorer, or other, save in override folder]. 'HitDie' column with base classes at top. You can edit the Infinity and NWN rules with the many .2da files.
I changed BG2 (for Classic Adventures) adding some ~ Oriental Adventures, ~ FF Tactics, and other modified classes. Races and their stats and bonuses I also changed somewhat, making the half-orc a 'Creton' so Ogre, Minotaur, etc fit here. Half-elf is 'Changling' so room for Aasimar or other half-breed people here. Also halfling goblins.
I changed IWD2 to fit a more general class system ~ Symbaroum (8 HD for all classes, BAB: middle, Saves: all low, less automatic feats but more feat choices, universal skills (no skill bonus at level 1--solving the Rogue first level choice or you get jipped on skill points problem), completely editable spells (ie Favored Soul is easy to make with Sorcerer or Bard) and spell chances with longer summons and not so auto magic missile (changed to storm shuriken), etc, etc). I really like IWD2 character generation, just wish there was more content and quest mods for the game.
There are limits to each game of course, esp with classes that gain spells--these are not changed easily. NWN is very malleable, giving you access to all feats, class feats, spells, skills, items, so you can give feats automatically at level up, make them selectable, and move around to any class. *Some will not work if they are level dependent to a specific class. So you can change the Assassin to a Ninja by giving some Monk abilities at any level, or make them selectable/unlockable at any level.

This video made me want to replay nwn using a sorcerer, i will try a "melee" build just cause i really love the Tenser transformation's spell (iirc in this game the spell actually transform you, not only bust your stats).
