Rotisserie Beef Back Ribs smoke roasted with the Cajun Bandit on the Weber Performer

Rotisserie Beef Back Ribs
Ingredients:
- 7 bone rack of beef back ribs
- 2 Tbsp Maggi seasoning
- 2 Tbsp Plochman's yellow mustard
- 2 Tbsp homemade seasoning*
- butchers twine
* Homemade Seasoning:
- 1/3 cup kosher salt
- 3 Tbsp mustard powder
- 1 Tbsp granulated garlic
- 1 Tbsp granulated onion
- 4 tsp ground black pepper
- 2 tsp ground coriander
- 2 tsp crushed marjoram
- 2 tsp crushed oregano
- 2 tsp celery seed
Prep:
- trim ribs of any unwanted fat and remove membrane from back of
ribs.
- place ribs on spit and forks.
- tie with butchers twine to hold in place.
- splash with Maggi seasoning and let soak in.
- squirt with Plochman's yellow mustard.
- sprinkle with Homemade seasoning*.
Cook:
- light coals, add to cooker & preheat to 250-275 deg F.
- add chunks of hickory wood for smoke
- put spit on rotisserie.
- cook ribs until probe tender to an internal temp of 195-200 deg F.
- remove from cooker & spit, and let rest 15-20 mins.
- slice ribs into riblets and serve.

I wanted to spin this rack and tying them up worked out well... all though cooking these low and slow with the CB rotiss presented a bit of a problem trying to maintain steady temps with all of the air leakage. None the less the ribs turned out great! Cheers to ya! : )
Thanks for showing the idea of using the strings. I've never tried doing ribs or other "thin" cuts on the rotisserie because I didn't know how to secure them. Great cook Chris.

Yeah buddy... these were freaking awesome ribs! Low and slow with the rotisserie presented a problem

Either your jaw is strong or these mothers are super tender! I have never made beef ribs, but I can definitely tell you that these are the most juicy and tender that I have ever seen anywhere! Chris this cook is Dynomite!!

It's a whole different world goin' round. Meat that is cooked on a grate renders out. On the rotor its always getting basted as it turns. It makes a big difference + its more moist. When i first did pork babyback ribs they would be too dry. But on the rotor much more moist. Nice job on video
Hey Chris great job on those beef ribs. Gotta say they look delicious I just made myself some pork ribs the same way Yesterday a person I was talking to says try them this way. Got ask where you're from and is that the Wegmans beesting oil that's on your countertop? If so I miss my Wegmans on from New York and I live in Arizona now.

Hey Matthew, temps were up and down a couple of times due to all the air leakage, so it was a bit harder to maintain temp. I did know i would have to add more coal at one point. What ever the case maybe, these ribs truly came out awesome! Phil came up with a send off that I'm going to try out...
I don't think it gets any better than that...a big ol' hunk of meat with giant bones sticking out! It looked great!

Yeah screwy things are happening. If someone comments on a video and I reply... lets say with a question and then they reply to that comment, I won't receive that notification and I'm also not receiving all my notifications on all my devices. Yo Ken, these ribs turned out excellent and were a big hit. The rotisserie did a good job but presented a bit of a problem with cooking low and slow. The ring has holes in it... plus there was a good amount of air leakage around the lid.The rub was real

I tried putting the spit through the midway point 1/2 on one side 1/2 on the other, but that wasn't working so well when I went to put the forks on... so your way is what I came up with... lol.
