Somen Salad: The Most BEAUTIFUL Salad for your next BBQ | Diana's Kitchen

  • This is a great salad to bring to a party due to the nice crunch you get from the lettuce and it looks just BEAUTIFUL! You can easily make the dressing ahead of time and assembling the salad is quick and easy. Try this recipe for your next summer BBQ or potluck!
    Ingredients
    For the dressing:
    1/2 Cup sugar
    1 Tsp salt
    1/2 Soy sauce
    1/4 Cup sesame oil
    1/4 Cup vegetable oil
    3/4 Cup rice wine vinegar (substitute champagne vinegar)
    1 Tsp garlic power
    2 slices of ginger, smashed
    For the salad:
    1/2 Pack somen noodles, cooked and chilled
    1/2 Head of lettuce, shredded
    2 Eggs, scrambled
    1/2 Cucumber
    2 Slices of ham, diced
    4 Slices of salami, diced
    1/4 Cup green onions, chopped
    1/4 Cup imitation crab
    Sesame seeds
    To make the dressing, combine all of the ingredients into a jar and give it a good shake until the sugar, salt, and garlic have dissolved and you’re done! Store in the fridge, where it will keep for at least a week.
    To make your salad, first cook your noodles and chill them in a large bowl with cold water
    Cook your scrambled eggs in a flat layer, then remove them from the skillet to cool and cut into squares (or whatever shape you’d like!)
    Shred/chop your lettuce and imitation crab (if using) and dice your deli meats
    In a 13x9 pan, layers your ingredients, starting with the noodles and then the lettuce. From there you can layer the rest of the ingredients in whatever order you’d like, just don’t forget to add the sesame seeds at the end!
    You can either dress the entire salad or leave the dressing on the side for people as they serve themselves, enjoy!

    There are 2 kinds of rice vinegar…which one did u use?
