Glauti Kabab, Tunday Kababi Lucknow Waalay Style.
QEEMAH BEEF OR MUTTON UNDERCUT: 1 Kg (Or any part kaa Rookha Qeema) {FINE GROUND}
Gurday ki Charbi: 50 gm (Grind with Qeema)
Cream: 1/4 cups
Yogurt: 1/2 cups
Ginger paste: 1 tbsp
Garlic paste: 1 tbsp
Kachcha Papita paste: 8 Tbsp
Green pepper: 2 to 3
Kaalay chanay roasted ground: 1 cup or (Lighted Roasted Besan)
Fried Onion: 100 gm finely crushed
Raw onion Paste: 2Tbsp (Thank to Amber Khan)
Hara Dhanya Finly crushed: 1/2 cups.
Kaajoo 2 Tbsp
GROUND SPICES
Salt: 1 tbsp or to taste
Red chili powder: 1 tbsp
Yellow chili Powder: 1 tbsp
Crushed Red Chili: 1 Tea spoon
Javetri: 1/4 Tea spoon
Jyfal: 1/4 Tea spoon
WHOLE SPICES
Black pepper: 8 gm
Cloves: 4
Green cardamom: 6
Black Cardamom: 3
White Cumin: 1 Tea spoon
Black Cumin: 1 Tea spoon
Sounf: 1 Tbsp
Daar chini: 1 stick of 1 inch
KhashKhash: 50 gm
Chironji: 50 gm
Ajwain: 1/4 Tea spoon
Kabab Chini: 12
Rose Petal dried: 2 Tbsp
Zaafraan: 1 pinch
Kewda water: 2 tbsp
Rose water: 2 tbsp
Ghee: 1 tbsp
Ghee or oil to fry: 1 Tbsp
PROCEDURE
Grind all Whole spices very very fine, as explained in the video above. Grinding separately (Wet & Dried)
IN a mixing bowl on top of QEEMA with Ground Charbi, put all above ingredients including zaafran, kewda, Rose water, and 1 Tbsp ghee, and mix with both hands. Mix them very well, then leave it on room temperature for 2 hours, then 2 hours in a refrigerator, then one additional hour at room temperature. Then Use a wood charcoal to do DHUWARA for 1 minute. (LID WILL BE ON)
In a wide non stick fry pan make very thin layer of oil or ghee. Preheat it for 3 minutes at 3/4 flame. Make 2 inch diameter 1/3 inch to 1/2 inch thick tikyan of qeema mix. Cook one side until one side gets medium brown, same procedure with other side. Your Glauti Kabab (TUNDAY KABABI STYLE SPECIALITY OF LUCKNOW) is ready. JUST a reminder that these kababs are very soft. - Zábava

I made it the very first time the way you told It came out perfectly.. Everybody loved ur recipe.. But wen I cooked second time that butter softness in kabab was not there..
What it could be Sir?....
Also that change in colour of the dough didnt happen the second time.... while it goes for marinating..

Shukriya sir ,now i am so thrilled with this recipe which i will certainly try , the thing which haunted me for years the 100 Masala they boasted about , a gimmick as i may call it now , the way you describe your recipes i take them as coming out of some authority so shukriya once again to take the ghost out his is going to be a marvellous effort soon in my humble kitchen .
One more thing as you describe here is the Gurde ki charbi , question here is will charbi from elseware from the bakre ki rass will do .or strictly adhere to gurde ki charbi only

If you go to Butcher shop, they will definitely can give you Mutton fats around Kidney. So the dry Fat is the matter doesn't matter its with kidney or not.

Two things i would like to add here , one is raw onion paste and second is Koyle ka dhuwara . My In laws lives in Lucknow and these Kebabs are something that's always there at home .

I am very sure of raw onion paste being used as well . I got their masala as a very special gift to carry back to US so that my husband can enjoy his fav local delicacy .I was told to add raw onion paste n other things by none other than the tundey kababi's grandson, who now runs the Aminabad branch in Lucknow .

Assalaam walaikum babar bhai. Mizaaj Bakhair. Hope everything is fine at home. Badi khushi hoti hai aapko pakate dekh ke. Bada ishtiyakh hai ki inshallah kabhi aapke saath kuch banaye.
Today i am writing to you to share something very vital for lucknow ke galawat ke kawaab. A lot of scented ingredients goes into this beautiful recipe. bhaijaan nowadays all these tunde kawaabi and other small and big kawaab walas in lucknow use Lazzat-te-taam ( Lazzat-e-Taam. is sold in just a few shops in the old area of Lucknow. I would personally suggest to buy it from Mata Badal Pansari, Aminabad.)
However, I am also sharing with you the list of ingredients of the above masala.
Ingredients
5 gms clove
7 gms Green Cardamoms
3 gms mace
2 gms cinnamon
1 nutmeg
5 gms black pepper
5 gms coriander seeds
5 gms baobeer
5 gms allspice
5 gms of coconut
5 gms of jarakhush
5 gms of cumin
5 gms of caraway seeds
5 gms of sandalwood pder
3 gms rose petals
5 gms makhana
1 gm Bay leaf
5 gms poppy seeds
5 gms fennel seeds
5 gms anise seeds
5 gms white pepper
dry fennel leaves
1 tbsp kewra
1tbsp mitha ittr
Method: Lightly roast all the dry ingredients on a griddle on a very slow flame til subtle aroma emanates. Remove from the fire and pound or grind in a grinder, sieve finely, then add kewra and mitha ittr. Dry indoors.
Bhaijaan even tunde wala also put this masala but doesnt admit and show. you have rightly said they claim to put 100 masalas but it is just a mockery and nothing else. however, these 24 masalas are definitely there and next time you try making these kawaabs with these masala, Inshallah u will get entirely a different taste and will be good.

Delhi-UP-Karachi-Khaane sir i also did a bit of research on lazzat e taam but baobeer and jarakhush are not available in market and nobody knows what are we talking about ...even google search doesnt have answer :)
As you know when mughals came in india they brought their culture, spices architecture and many other things with them. This zarakhush is from eastern asia which is dried lemon grass and baobeer is somewhere from turkish side which is dried bell peppers. The idea of these two ingredient is to add color and fragrance to the food.

aaj kal Lucknow ka yeh haal hai, ki har gali-nukkad-chourahey par kebab bechney wale paida ho gaye hai, aur apney aap ko asli tundey key kabab claim kartey hain. Asli tundey 1 hi hai, jo ki chowk mein milengey lekin ab to alambagh mein tundey kebab bikney lagey hein. Vaisey dhua lagatey hue hamney dekha to hai, par woh tundey hongey yeh doubt hai. AMINABAD mein Alamgir ke yaha bhi badhia kabab aur roomal roti aur biryani milegi (I can authenticate that). Jo recipe apney batatio hain Lucknow mein yehi recipe follow hoti hai, lekin hum log papeeta ko cheel kar peestey hai aur cream nahi daltey. Yeh recipe hum zaroor try karengey. Aj apki masaley wali biryani banayi. Bahut umda aur khushboodar bani. Ab apki recepes hum jaisey jahilon ko bhi samaj aney lagi hai. bahut bahut shukriya.
