Your wig looks really nice on you. But you looked good with short hair too. It's fun to change things up sometimes. As to the white fish in the freezer, what about fish tacos? If you have flour tortillas leftover, you could use those. Baked butter seasoned fish would be good too. I recently tried Moroccan Fish -- learning the recipe from watching several CZcams videos on it. The Moroccan Fish was delicious. Batter fried fish with chips is always good too. I learned a recipe for halibut in Alaska, it was called Hallibut Aleska... it's basically fish baked in a casserole dish with a white sauce (50:50 mayonnaise to sour cream) that had diced onion, salt, pepper, and cheddar cheese in it. I don't recall anything else in it but dill weed would work too... My vote would be the Moroccan Fish, served with rice pilaf, and a veggie.😊

I completely share your thoughts 're hot cross buns and I was having th same conversation with my daughter today in the middle of the grocery aisles in M&S. I They had normal..real hot cross buns, then apple, chocolate,cheese (wtf!!!!), Chewy caramel and finally normal ones ruined by adding chocolate chips. Why??? Why ruin a beautiful thing?? I have altered my eating habits over the last few months. I've been vegetarian for 39 years but now I have become vegan and alas no hot cross buns for me...unless I can find vegan ones. I hope your treatment is going "well" (I always found it weird saying my cancer treatment was going well when I felt horrendous throughout my treatment). You're very much an inspiration Donna to other ladies starting out on their treatment xx

Hiya, The hair suits you and you wouldn't even know it wasn't real if you never said or people didn't know your back story. You should be commended to for recognising when things are going in a direction you are not best pleased with and choosing to reign it in - I reckon it is probably the creme eggs and hot cross buns too. Even when I am aiming to increase weight I try to make choices that are nutrition rich, but still acknowledge no food is bad. For treats right now I am loving the sainsburys rice pudding that says it is traditional made and tastes like that too. With the white fish either homemade fish finger, or serve with a white cheese or herb sauce, or you could make egg fried rice and add it to that with loads of spices and flavours? Those are my suggestions as a shame to waste the fish. Thanks for everything X

White fish can be very bland, I agree. However, it's so low in fat and a relatively good price (especially frozen). How about combining the white fish and salmon to make a creamy fish pie topped with cheesy mash? You have enough there to make two good meals. White fish also makes a good curry - add the usual spices and some coconut milk and coriander and serve with rice. Almost Goan!

I poach my fish (white fish, salmon and sometimes prawns) in whole milk for 8 mins I add a couple of crushed bay leaves, some pepper corns, a whole pricked garlic clove and a good sprinkling of salt. Meanwhile I cook my potatoes (in a separate pan) cut into small cubes for a similar time (they should be soft when cooked in a boiling pan). I drain the fish to remove the aromatics but retain the fish/herb infused milk to create the sauce for the pie. Layer the fish in a heat-proof dish. Make a roux sauce with flour and butter and the infused milk and pour over the fish. Top with the potatoes mashed with butter, a little cream and a good handful of cheddar. Top with a little extra cheddar and bake for 20+ mins in a medium oven until the top is crispy. My boys love this dish served with a healthy side of broccoli and/or broad beans.
