It depends on what is God learning, in the view of open theism, God is although not knowing what EXACTLY is gonna to happen, but it doesn't cease him to be omniscient because there is no content for him to know yet, just like if we are pointing a empty table to request God to remove the cup on it, there is no cup for God to removes.
Hence, before today happen, God didn't knew I am typing here, but after I start typing, God comes to known that, He just learned it, it is a new knowledge (proposition: this guy is writing). To learn is to receive a new proposition, I don't think it restrict the perfection of God.
In variety of views that, the creation is flexibly dynamic, God can let the creation to evolve on it's own progress without Himself leading each and every step, but yet God can always knows what is going on in the creation. This type of view is certainly fitting in the domain of Monotheistic Orthodoxy.
