    Soba means buckwheat in Japanese and is Japanese traditional food. probably making soba noodle is one of the most difficult things to master.
    please note, Don't try this recipe. lol
    to make 100% soba noodle, You'll need stone ground and really fresh buckwheat flour. I think it is almost impossible to get such buckwheat flour outside of Japan.
    When you come to Japan, go to soba restaurant where serves 100% buckwheat noodles(it's called "Ju-wari soba").

      You can, but you will make "standard" Noodles. Soba are made with buckwheat flour.

      Its a Japanese Udon Soba Noodles Knife its also called a Cleaver Noodles Knife. It was designed especially for the purpose of cutting the dough into very thin strips in order to make the noodles, obviously. XD
      BUT DAMN DO I WANT THAT IN MY KNIFE SET!!!

    The lack of music works well with this video because there are a lot of steps that are audibly and visually satisfying. I don't think it would work as well for recipes with simpler processes like bread or deserts. Anyway, I really liked this video. Well done!

      XYChromatic Easily my second favorite series of all time, right behind Bebop and right before The Shield. Battlecry was a great game. Just wish we'd see a proper remake of Robotech: The Macross Saga, with the same voice cast and music but without the Robotech Masters nonsense..would make it a lot more accessible to new audiences.
      Tried to watch SDF Macross and I just couldn't deal with the horrible, horrible English dub and the music felt completely off. One of these days..

    Thank you for this. I love "no music." I am Armenian. This is how my grandmother would make our very thin dough for paper-thin pan-sized noodles, layered in special dishes. It is so easy to forget this level of care and craft in making food

      The quiet background with only the sounds of cooking is called ASMR. If you're interested there's probably more ASMR videos other there. Although I think he makes the best. So I just watch his over and over again.

      Perhaps this may make you reconsider. At 10:19 , you can see that he slices the dough, and using the knife, he moves the board ever so slightly.

    This video brings back memories of making soba in a small countryside town I lived in around Fukushima-ken a few years ago. The skill of the master there was phenomenal and the soba was the best I've ever had. Thank you for your great video man. Very artfully crafted.

    Without the usual talking that consumes my concentration in usual videos cooking has really become an art for me for the first time. I thought the art was always in making food taste good because that can be challenging, but this is art on a whole new level for me.

    Oh my goodness. Truly one of the most beautiful videos ever...and a lovely video for any genre. Your skills are truly mesmerizing and I am embarrassed to say I was actually moved to tears. (Knowing this is how it has been done generation after generation is like watching history preserved) Many thanks for your art and for sharing. BTW: the buckwheat you have is a lovely green beige...here in the States it's brown. Is this a specific type of buckwheat>?

      here in UK 100% buckwheat is beige. what you may be finding is non stone milled whole grain buckwheat which has the husks and bits not fully ground up because that kind is mostly used by health conscience for making breads and stuff. For soba, you need stone milled buckwheat flour, it should be whitish beige and have a kind of nutty peculiar smell and be very soft and fine like cake flour

      Brown buckwheat is roasted, that's it! Have no idea if they have this brown one in Japan. It is better for the side dish, the taste is more strong, but for flour green is better. I love both! And video is just cool!
