- Turkish Lentil Soup Recipe
Ingredients:
1 cup red lentils, rinsed and drained
1 large onion, finely chopped
1 medium carrot, peeled and chopped
1 medium potato, peeled and chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
6 cups vegetable or chicken broth
2 tablespoons olive oil
Salt and pepper to taste
Juice of 1 lemon (optional, for serving)
Fresh parsley, chopped (for garnish)
Instructions:
Rinse Lentils:
Rinse the red lentils under cold water until the water runs clear.
Sauté Vegetables:
In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
Add minced garlic, chopped carrots, and potatoes. Sauté for a few minutes until the vegetables start to soften.
Add Spices and Tomato Paste:
Stir in ground cumin, ground coriander, paprika, and tomato paste. Cook for an additional 2-3 minutes, allowing the spices to release their flavors.
Add Lentils and Broth:
Add the rinsed red lentils to the pot and pour in the vegetable or chicken broth. Stir well to combine.
Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the lentils and vegetables are tender.
Blend (Optional):
For a smoother texture, you can use an immersion blender to partially blend the soup. Be careful not to overblend; leave some texture.
Season and Serve:
Season the soup with salt and pepper to taste. If you like, squeeze in the juice of one lemon for a hint of brightness.
Ladle the soup into bowls and garnish with chopped fresh parsley.
