In shaker
.25 oz. or 8 ml. White Vinegar
.5 oz. or 15 ml. Maple Syrup
~ 1 oz. or 30 ml. Yak Butter (or Ghee)
2-3 twists of peppercorn
1 oz. or 30 ml. Bianco Vermouth (Carpano)
2 oz. or 60 ml. Gin (Aviation)
Crack ice and shake
Strain into glass
Peace Train Real:
In mixing glass
1 oz. or 30 ml. Sweet Vermouth
1 oz. or 40 ml Calvados (Lemorton)
1.5 oz. or 45 ml. Gin (Aviation)

Lol it's because we are watching a show who's main character was a disillusioned psychopath with a poorly thought out life philosophy. Now he is wrestling with the actual consequences of that ideology. Vigilante is the same person, only he has thought about it and said fuck it, it's cool man. Also.... he's so stupid it's hilarious.

A Greg branded gin would be very good, but the bottle would only be two-thirds full because a third of it would be spilled on the floor of the factory when it was filled.

Maybe but I have to admit that I don't really like fancy gins except maybe for Old Tom's. I prefer the really cheap London dry like Gibson's and Beefeater in my drinks, not sure why. I think Greg should go for a Rum instead, a mix between some Jamaican pot stilled rums would be really nice.
And yeah, I do remember Greg talking that he likes the hourglass shaped jigger because it spills less then other kinds in some old episode, it is scary to even imagine how much more he would spill with one of those Japanese weird shaped jiggers.

I like how you were concerned that no one would take your palate seriously after you couldn't pick out expensive bourbon, and then are like, "oh yeah, straight white vinegar, that's delicious".
That stuff he was drinking really is delicious and is very fruity and sweet. It isn't even close to normal vinegar.
Also, Bourbon cost has a strong brand and history price tag in it. My dad regularly hosts blind Bourbon tastings and top shelf seldom wins. Also, it all depends on your taste. I primarily drink rye , so I liked a bourbon no one else liked because it had more of a rye profile.
If he's a health food nut, I can virtually guarantee he was using apple cider vinegar instead of white. Health food nuts are obsessed with that stuff, for some reason. There's like a whole shelf dedicated to apple cider vinegar in my local health food store.

A (traditional) use for yak butter is in butter tea in Tibet and other places in the Himalayas. I think one of the reasons the butter was part of the tea was just as a calorie booster, since calories are hard to come by on the Tibetan Plateau.
As an aside, the word "yak" is a loanword from Tibetan, and Tibetans think "yak butter" (and "yak cheese" etc) is a hilarious thing to say, b/c in Tibetan, "yak" is the word for the male yaks. So it's basically like saying "bull butter".
(Obviously, the English loan is not gender specific).

Plus it’s super salty which would be even harder to come by.
My interpretation of this scene is that Peacemaker did actually invent a great version of this drink, and then made a really bad version of it for Adebayo because everything in his fridge is canonically expired. Like he ran out of Yak butter for Adebayo's drink and grabbed some "regular butter" from the fridge forgetting everything was expired.

As others have said, apple cider vinegar, but if you want to get real cheffy you could infuse your gin with peppercorn and maybe even do a butter wash, this could actually be really good
I didn't think about a fat wash, but that could be good too.
Between a pepper-infused gin, a fat wash, and apple cider vinegar, I think we need a sequel wherein Greg makes the most elevated version of this!

Yeah the vinegar and the peppercorn and the maple syrup makes this feel like a juice cleanse detox bev that he wanted to make "classy" by adding gin and vermouth to haha

So, there were Colonial era drinks that used vinegar-- it was a way to kill any bacteria/nasty stuff in the water--they used berries and sugar to balance the vinegar out and honestly it was *incredibly* refreshing. If you've ever had/made Japanese style pickled radish or carrot, that's the underlying flavor profile.
I'd probably love that- i could eat pickled daikon by the pound
@@snrkybrd There was a colonial era restaurant near me that I had the chance to try it at-- it was a hot day and man, the moment it hit my tongue I just felt so refreshed. Unfortunately the restaurant did not survive Covid, so I'd have to dig up a recipe somewhere.

There are also shrubs, which are vinegar-based drinks. Marisa McClellan of Food in Jars is a great resource for recipes!
There is a cooking ingredient called "Gastrique" that uses equal parts sugar and vinager reduced to a syrup. I like to use it to balance out things like Tomato sauce. Maple syrup and vinegar probably made something along the lines of a tangy gastrique. At least that was my first thought

I loved this show, i was hyped the threw a cocktail in the mix. The way they showed off the ingredients and everything made it feel like they wanted people to make it and im glad Gunn backed that up. Thats a good showmaker practice

Replace the vinegar with a shrub made with strawberry, basil, rosemary, and apple cider vinegar. Either drop the butter or melt the clarified butter and dry shake first. I’m thinking it would be really good.

This is my absolute favorite episode at this point, and it will be the one I show people to explain why I’m a big HTD fan-it has everything: Greg meandering; a bit of geekery/media tie-in; some history; self-conscious mispronunciations and corrections; editorial snark; a Meredith moment; the pouring all the drinks into a thing…I don’t remember any spills or slo-mo, so I’ll have to watch again to be sure. I laughed on a day when I really needed it. Thanks, Greg.

My initial assumption of the scene was that the mixed drink might have been okay, since Peacemaker had apparently enjoyed it before, but that he might have unintentionally included the butterfly food in there instead of one of the ingredients somehow. But that never came up, so I guess probably not!
What about treating the butter as a Gardenia mix, whipping it with the maple and the pepper? It sounds too fancy for Peacemaker, who probably added it due dietary reasons (like a bulletproof coffee or a tibetian tea), but it seems like a nice way to improve the mouth feeling of the drink.
Vinegar used to be popular in switchels, which is a fine enough drink, but got displaced when citrus became more available for sour notes.
Calvados is nice in an apple punch with lemon, cardamom and star anise.
The fact that Reynolds bought Aviation might also be a contributing factor to people associating the two.
I don't drink at all, but Greg's personality along with the pop culture references and drinksperiments (I can make words too, Greg) make it fun to watch now and again
If he's a health nut, I think it should've been an Apple Cider vinegar in the drink rather than White. I have a cousin who's a fitness person, and they're totally a glass of apple cider vinegar straight a day.
I'm not usually here this early but thank you for teaching me basically all I know about bartending and for just being there to make me smile I'm going into bar school in a few years and I'm excited to put all I've learned from you to use officially. It taught me next to nothing about what it actually means to be a bartender, but did end up giving me a place to start and helped me get my first bartending job. I am sitting watching this before work and besides the vinegar, this cursed cocktail basically sounds like someone raided the fridge for breakfast items and used it in a martini. Black Pepper from eggs, Butter from toast or Pancakes, Maple Syrup from Pancakes. It really does just sound like breakfast martini in the most literal sense
I wonder if Bragg's organic apple cider vinegar would have an effect on the flavor, maybe bring that apple thing you mentioned forward. Could be tasty, and would certainly carry forward that "health food store" vibe from the yak butter. ^.^
Hey Greg, I came up with my own spin on a Dark N Stormy. But since that's a trademarked cocktail, I call it a Sailor's Warning, and in my mind it's a fantastic drink that welcomes customization. I've tried a different rums in this drink, and I've found that only Jamaican style rums work the best. Anyway I was wondering if you could try it out, give your notes, and perhaps put your own spin on it, which is really the spirit (haha) of the drink. And while the recipe doesn't call for Orange bitters, they add a lot from my experimentation. Anyway the recipe is as follows
Into the shaker:
Ice
2 oz of Appleton Estate 8 Year, I've tried a few Jamaican style rums but this is constantly the best.
Roughly 1 oz. Fresh squeezed lemon juice
.7 oz of Grand Marnier
4 to 5 dashes of Ango Bitters
And about a quarter of the peel from the lemon you sqeezed.
Shake it baby
Strain over ice
And add 3-4 oz of ginger beer
Drink that bitch
Anyway that's the Sailor's Warning. I invite anyone who tries this to customize it. Make it your own. I've done many a variation of this and it always comes out pretty good.
My favorite cocktail comes from the ponyboy bar in Oklahoma city. I forget the name but its the perfect spring/summer cocktail.
Its a mix of rum, soda water, lemonade, and passion fruit syrup

For anyone who hasn't seen the show he probably looked insane, and that idea makes me laugh.

Just got back from a week in France (with a day in Normandy). Not an expert by any stretch, but happened to stop by a Calvados distillery to buy some for my office managers. Calvados is to apple brandy as Champagne is to sparklingly wine. They take it very seriously. ;)
I'd love to see improved versions of both! As it stands, both are fine, but lacking something. For the Peacemakers one, you could try fat washing the butter, using less vinegar or replacing it with apple cider vinegar for the reasons Atsu333 mentioned. For the original you already had some ideas, like using carpano antica, maybe you could increase the chartreuse or add bitters, garnish with apple to bring that out more?

Gotta admit, your reaction inspired me. I thought maybe you were playing a prank. So I tried my own version and honestly... Same reaction. Vinegar in a drink (if it's a good one) is actually quite pleasant. Here's my specs:
1/4 Oz Cherry Vinegar (PÖDÖR)
1/2 Oz Dry Vermouth
1/2 Oz Sweet Vermouth (Antica Formula)
1/2 Oz Agave Syrup
2-3 drops vanilla extract
2 Cracks black pepper
2 Oz American Gin
Peacemaker's version looked to include "Log Cabin" or some other cheap maple syrup with imitation flavors so I decided agave boosted with vanilla would be better. I considered coconut cream or heavy cream as a replacement for the butter, but glad I didn't and just omitted it completely. It turned out much sweeter than I expected and it could almost use something herbal or maybe even more black pepper (as odd as it sounds)? Definitely has a lasting finish and is strangely compelling. If I were to stray further from the "lore" recipe; I would probably try a little orange juice and a barspoon or two of something herbal like Benedictine.
Would love to see more vinegar drinks on here - had a gorgeous drink with balsamic and Amaro Averna at a bar near me and I’m curious!
Just an aside on the vinegar thing (and why it worked with the maple syrup): there is such a thing as "drinking vinegar," and it's usually sweetened. Most the ones I've come across are sweetened with Stevia (yuck), but there's one or two out there with cane sugar syrup. So, yeah, I can see the maple syrup fulfilling the same role and "tempering" the vinegar to, well, not be so sharp and vinegary. 😆
Also: that drinking vinegar stuff is ALSO a health nut thing. (I am not one of those -- I'm just some cryptid of a human that likes vinegar.)

Yak butter is popular for making Bullet Proof Coffee while on the keto diet. It's a healthy fat and makes the coffee very frothy and delicious. I'm not keto anymore, but I sure remember how good the coffee was!

If you added a drop of lecithin to the butter/vinegar before adding the ice you might be able to emulsify it so you didn't have solid butter pieces. Lecithin is also a common health supplement. Technically it would be a mayonnaise cocktail!

I ate at a Tibetan restaurant in Philly, and it had butter tea (using yak's butter) on the menu. It's supposed to help with the high altitudes and colder weather.

Okay bro, I absolutely love your channel. I don’t drink, but I love cooking and honestly you’ve given me inspiration to mix drinks for friends and family. I can’t remember which exactly it was, but there was a spiced rum drink that when over extremely well the last Thanksgiving before COVID!
Now I won’t be around the bush: while all of the above is true, I only typed it here to butter you up for my suggestion. Would you ever consider trying CW’s “Rutger Hauer” drink from episode 7 of Mythic Quest? I feel like you could really do something cool with it, since it’s basically just three ingredients as he describes it in the show.

A distillery in Portland, OR had a whole line of flavored vinegar drinks. I was also surprised at how good they all were.
