What's For Dinner | Jambalaya, Hot Pockets, Potato Sausage Soup
The video is a cooking demonstration titled "What's For Dinner | Jambalaya, Hot Pockets, Potato Sausage Soup" by Rachel at the 1870s Homestead.
Rachel starts by roasting a whole chicken to make chicken broth with various ingredients like carrots, onions, bay leaves, peppercorns, allspice, celery powder, and cayenne.
She later uses the chicken to make chicken jambalaya with Creole seasoning, Creole tomatoes, rice, chicken broth, and other ingredients, then bakes it in the oven.
The video also shows Rachel making homemade chicken and broccoli Hot Pockets using bread dough, chicken, broccoli, and homemade alfredo sauce.
Finally, Rachel prepares a sausage and potato soup with pork sausage, seasonings, chicken broth, potatoes, milk, and broccoli, though she mentions adding other greens is an option.
Love making Stromboli’s, they’re so so easy.

Rachel, everything looks great! I make Zuppa Tuscana also. When I first started making it I also used potatoes-my husband and I both really enjoyed that soup! Then some health problems dictated I drastically cut carbs and I was feeling a little sad about that soup but my husband suggested I just leave out the potatoes. I did and we still are enjoying Zuppa Tuscana-the low carb way. 😊. Looking forward more kitchen videos!
Same with me and my husband, and we now add a few chick peas instead of the potatoes.

Yesterday my daughter asked if I ever see HotStuff in the stores anymore. In 2000 I worked in the Schneiders factory in Canada where we made them. They couldn’t keep them on the shelves. I would bring they home for my two daughters and they loved them especially the chicken broccoli in Alfredo sauce. Unfortunately they stopped making them years ago. And my daughter wanted some for my two grandchildren. I told her I’d see what I could do.
Tonight as I am canning turkey stock, and removing the meat from the turkey necks I was catching up on all my videos that I am behind on. And BOOM 💥 There’s Rachel to the rescue!!!

I love hearing the kids in the background! I have been watching my great grandson and granddaughter one day a week. They are 2 and 1. The 2 year old is so picky and won't hardly try anything new. His sister, however, will eat anything you put in front of her.😂 Enjoy!

That's how i cook, too. I make proteins then just work it out!
That stromboli you made looks wonderful. I make a desert styled that way, roll.out dough, put canned pie filling, apple, blueberry, what ever you have, down the center cut the sides into strips and fold over the pie filling, bake for 30-35 mins, them I top with a simple confectioners sugar glaze and top with toasted sliced almond, with the skin, it is really good.
Always a highlight for me. Glad to see your faces and smiles. I understand about your plans not being what happens LOLOL! All best always.

I've never seen a jambalaya made without sausage, but now I'm going to have to try it like that with just chicken. I have creole sauce I canned last year just waiting to be used for something. I think I will make mine in the slow cooker instead of the oven. Thanks for the inspiration! 😊

Love the recipes!, being from south Louisiana I can tell you spent time there they re are a million recipes for jambalaya you have to season them a little extra cause the rice absorbs the seasonings

Rachel’s never had food poisoning, a la raw chicken E. coli, and it shows 😂😂😂 I have, and let me tell ya. IT. SUCKS!!!
I’m like “please wash your hands after handling the chicken” 😂. I think homegrown might be less susceptible though 🤷♀️
Ya...as a nurse, I'm cringing. The spice top falling onto the raw chicken and not getting washed put me over the top. Rachel...you're amazing...but please...read up on the dangers of raw poultry.
