Snow, snow & more SNOW! I love this time of year in Alaska. It's truly a winter wonderland. Snow removal is an every day chore here at our cabin. Joe is working hard on clearing the homestead of snow while I do homeschool with the boys. It's almost Christmas ya'll, that means it's ginger bread cookie time! Annnnnnnnd we've decided to put up some new walls in the cabin...any ideas where? Always a new project to work on here at the cabin. Day by day, I watch our little cabin take shape. GINGERBREAD COOKIES:
3 cups all-purpose flour
¾ cup dark brown sugar, packed
¾ tsp baking soda
1 TBS ground cinnamon
1 TBS ground ginger
½ tsp ground cloves
½ tsp salt
12 TBS butter, almost room temp, diced
¾ cup molasses
2-4 TBS milk
1. Add flour, brown sugar, baking soda, cinnamon, ginger, cloves & salt to a mixing bowl & mix.
2. Add butter pieces until the mixture resembles a fine meal.
3. With a mixer running low, gradually add the molasses & milk & mix until combined, about 30 seconds to a minute.
4. Divide the dough in half, forming each into a ball. If the mix is crumbly, add another TBS of milk. Wrap each in plastic wrap & refrigerate for 2 hours or overnight. If you’re in a hurry, you can put them in the freezer for 20 minutes.
5. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.
6. Remove one ball of dough. Roll out on a clean surface to about ½ inch thick. (Flour rolling pin if needed). Cut gingerbread cookies & place them on prepared baking sheets.
7. Bake the cookies until set, about 10-12 minutes (depending on your oven). Dough should barely retain imprint of your finger when touched. DO NOT OVER BAKE!
8. Remove cookies & place on wire rack. Allow to cool completely before decorating.
