Ever heard of baiju?
It’s the national drink of China, and the biggest-selling spirit on the planet... by a long shot.
Soon after Tasmanian Ian Sypkes discovered it, he decided to start distilling it, and he’s still journeying through the long and challenging process of getting it just right.

sorghum itself is a very high resistant crop.. it grows almost on any kind of soil.. making bai jiu is one of a great approach.. in can be marketed as sorghum vodka
Will be sure to look you up when we're down in Tassie next year
Awesome to see. As an Aussie distiller making rice whiskey it is great to see
Except it’s not made of rice….
Should be spelled "bai jiu", mate!
Thanks for the pickup!
"Baijiu" is correct. 白酒,two characters, one word. No need to separate the characters into two words.
