Refreshing Rhubarb Syrup: The perfect base for rhubarb juice and lemonade

  • Here is my recipe for a simple and refreshing rhubarb syrup that you can use as a base for rhubarb juice, lemonade, spritzer, or even rhubarb spritz.
    𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 (for 750 ml rhubarb juice / 1L rhubarb syrup):
    🥄 Rhubarb - 1.5 kg
    🥄 Orange - 1/2
    🥄 Water - 450 ml
    🥄 Sugar - 500 g
    🥄 Vanilla sugar - 2 tbsp (24 g)
    𝐑𝐡𝐮𝐛𝐚𝐫𝐛 𝐋𝐞𝐦𝐨𝐧𝐚𝐝𝐞:
    200 ml water
    2-3 tbsp syrup
    𝐑𝐡𝐮𝐛𝐚𝐫𝐛 𝐒𝐜𝐡𝐨𝐫𝐥𝐞:
    200 ml sparkling mineral water
    2-3 tbsp syrup
    Ice cubes for serving
    Lemon balm for serving
    𝐑𝐡𝐮𝐛𝐚𝐫𝐛 𝐒𝐩𝐫𝐢𝐭𝐳:
    40 ml (4 cl) Aperol
    30 ml (3 cl) rhubarb syrup
    80 ml (8 cl) Prosecco or sparkling wine
    1 splash of mineral water
    1 orange segment, with peel
    Optional ice cubes
    2-3 mint leaves

    Give your beverages the fruity-fresh touch of summer with my rhubarb syrup! With this simple and delicious recipe, you can easily create refreshing rhubarb juices, zesty lemonades, and sparkling spritzers. The rhubarb syrup offers endless possibilities for creative cocktail creations and adds a delicious freshness even to a glass of sparkling champagne.
    🗒️ 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:
    ✔️ (1) Thoroughly wash the rhubarb stalks.
    ✔️ (2) Cut off the ends of the rhubarb stalks.
    ✔️ (3) Slice the rhubarb into small pieces, approximately 1 cm in size.
    ✔️ (4) Place the sliced rhubarb pieces in a 5-liter pot and add the water and orange juice.
    ✔️ (5) Bring everything to a boil.
    ✔️ (6) Once the water is boiling, reduce the heat to medium and let it simmer with the lid closed for about 10 minutes.
    ✔️ (7) After 10 minutes, stir everything vigorously and simmer for another 10 minutes until the rhubarb becomes soft and falls apart.
    ✔️ (8) Set up a coarse sieve or colander over a bowl or another pot.
    ✔️ (9) Pour the cooked rhubarb into the sieve and let the juice drain. Stir the rhubarb with a spoon to extract all the juice.
    ✔️ (10) Then strain the drained juice through a fine-mesh sieve. Repeat this process twice.
    ✔️ (11) The drained liquid is now your rhubarb juice (approximately 800 ml).
    ✔️ (12) In the next step, we'll prepare the rhubarb syrup.
    ✔️ (13) Pour the drained rhubarb juice back into the pot.
    ✔️ (14) Add the sugar and vanilla sugar.
    ✔️ (15) Stir the mixture well to dissolve the sugar and bring the syrup to a boil over high heat.
    ✔️ (16) Simmer the syrup for 5 minutes.
    ✔️ (17) Stir occasionally.
    ✔️ (18) Remove the pot from the heat and let the syrup cool slightly. Skim off any foam using a spoon.
    ✔️ (19) Carefully pour the syrup (approximately 1 liter) into sterile and clean bottles or jars.
    ✔️ (20) Seal the bottles or jars tightly and store them in the refrigerator. Unopened and kept in a dark place, the syrup will last for approximately ten to twelve months.
    ✔️ (21) Now you have your homemade syrup!
    ℹ️ 𝐒𝐭𝐞𝐫𝐢𝐥𝐢𝐳𝐢𝐧𝐠 Jars
    How to easily sterilize jars in the kitchen:
    (1) Submerging jars in boiling water: Fill a pot with sufficient water and bring it to a boil. Submerge the jars (+lids) in the boiling water and let them sterilize for about 10 minutes.
    (2) Sterilizing jars in the oven: Place the clean jars on a baking sheet and place them in the oven. Preheat the oven to 120-150ºC and let the jars sterilize for approximately 20 minutes.
    (3) Sterilizing jars in the microwave: Place the clean jars in the microwave and heat them on the highest setting for about 1-2 minutes to sterilize them.
    (4) You can also wash the jars in the dishwasher to sterilize them. However, use a hot cycle and skip additional detergent. After the cycle, make sure to let the jars fully dry on a clean towel or dishcloth before using them.

    This I'm sure tastes amazing!! I grew up with my grandma making Rhubarb dessert, so yummy!! I've never made anything with Rhubarb, but this syrup sounds amazing, especially for the summer.
