  • Meal prep takes many forms, but I'm all about prepping ingredients rather than full meals. This way, you still have flexibility in your week to put together different meals using the ingredients you have ready to go, cause let's face it - you don't know what you'll be in the mood for every night, and eating what you want & crave is part of that satisfaction factor! A little planning for grocery shopping & having versatile ingredients prepped, like this shredded chicken, sets you up to put together nutritious meals throughout the week, but with a little flexibility!

    Shredded chicken is one of my favorite protein ingredients to have prepped on hand for the week. You can toss it in really anything - salads, grain bowls, turn it into a chicken salad, or to fill up your tacos! ⁣And, if you're like me (yep, even me!), you don't love handling raw chicken and dealing with the contamination of your cutting board and knife. Well, this is the most NO FUSS way to cook up your chicken which is a major win in my book!

    Rotisserie chickens are a great option on those unexpected busy or late nights for convenience, but they tend to be much higher in sodium and you don't reeeeeally know how they're made. It's always nice to have control over how your food is prepared and knowing what goes into it - especially when it can be done in just 10 minutes! I wouldn't have you trade convenience for slaving over the stove for hours, promise! ⁣
