  • The Sous Chef’s meal prep chicken stew:
Here you see how I make the Sous Chef’s meal prep chicken stew. This can be a lot less expensive than shown, use up what you have in vegetables but try to vary colors with an emphasis on greens. Beans add to both fiber and protein .
Shop around: The Sous Chef paid $3:48/lb for these boneless, skinless chicken thighs at WalMart. My local supermarket generally has boneless skins breasts OR thighs on sale almost every week for $1:97/lb. Guess where I buy? We got eight servings out of this, so the price per isn't high, especially if you are able to source the chicken around the price I pay.
If you have an Instant Pot, use it. If you don’t, and you’re working several jobs AND you’re on a budget, find a used one on FB Marketplace or Craigslist. Even if you have to buy a new sealing ring that thing will save you so much time and money it isn’t true. Otherwise, figure double the cooking times stovetop on medium/low heat. I personally don’t care for slow cookers but if it’s big enough go for it.
OK, Dashi and Shaoxing rice wine. These bring a completely different and more fulfilling flavor to the stew. I’ll have a segment on the dashi soon; Shaoxing, I only use Nu Ur Hong (Daughter In Red). It just has the best flavor profile and is drinkable. $6:50 a bottle and if you ONLY use it for cooking it will last.
