CHICKEN TACOS:

MEATLOAF
2 lbs. ground beef
1 c. Italian seasoned breadcrumbs
2 eggs
1 Tbsp. minced onion
1/2 tsp. garlic powder
salt & pepper
1 Tbsp. Worcestershire sauce
SAUCE
1/2 c. ketchup
1 Tbsp. brown sugar
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. Worcestershire sauce
In a large bowl add the beef, breadcrumbs, eggs, onion, garlic powder, Worcestershire sauce. Season with salt & pepper. Mix together until thoroughly combined. Line slow cooker with foil then spray with baking spray. Form the meat mixture into a loaf shape and place inside the slow cooker. In a small bowl stir together the ketchup, brown sugar, garlic powder, onion powder, and Worcestershire sauce. Spread this mixture evenly over the meatloaf. Cover and cook on HIGH for 3 hours. Remove excess fat if desired before transferring meatloaf to cutting board to slice.

(I used 3 chicken breasts instead of thighs and seasoned with what I had on hand.)
KIELBASA WITH POTATOES & GREEN BEANS
(I doubled the recipe in the video.)
1 lb. kielbasa, cut into 1 inch pieces
1 small onion, diced
1 bag frozen green beans
1.5 lbs. baby yellow potatoes, quartered
1.5 c. chicken broth
salt & pepper
garlic powder
Spray inside of slow cooker with baking spray. Add in the potatoes, onions, green beans, and kielbasa. Season to taste with salt, pepper, and garlic powder. Pour the chicken broth over top. Cover and cook on HIGH for 4 hours.

All looked amazing last one we have been making for 70yrs my Oma made this I a big pot but she added a splash of vinegar, and we called it Mittag meaning one pot great cold weather dish. 👍❤️😋

Minced onion is toasty and really adds a depth of flavor to recipes. I love crockpot meatloaf!! I top mine with BBQ sauce. So good!! Great video!! I have not had chicken and dumplings since I was a kid!! Yum!!

Great recipe ideas Anne! I think I might add a tablespoon of dijon mustard to the kielbasa recipe and perhaps some dill.

I've done meatloaf in the crockpot so many times. I use a foil pan that fits in the crockpot. I usually buy a 3 pack and make 3 up at once, 2 for the freezer. Cleanup is a breeze, altho ots not quote as easy if i throw potatoes in around the pan.
I drain fat out of the poil loaf pan before serving.
Another advantage of the loaf pan is making it easy to freeze...i defrost in the fridge overnight. And if I forget to put it in the crockpot in the morning, it's also oven ready. Any meatloaf recipe works.

The meatloaf looked delicious. I wonder if it would work if I put wrapped potatoes on the bottom as a base and then the meatloaf layer.
We aren't big fans of crockpot food actually, but these all did look good. I am especially curious to try the meatloaf recipe as it did look so tender. And yes, the ketchup based topping is the best in my opinion too😊😋👍
I’ve never had any topping on a meatloaf. I have only ever eaten my mom’s recipe for meatloaf. I never even seen it made any other way but my mom’s way. I was actually grossed out when I saw someone had a ketchup topping on it. I actually asked her why did she ruin it. 😂 Like I said, I had never seen it any other way but my mom’s way.
