It hasn't really been done in the Minecraft Renaissance, but before there have been some.
Sethbling is the definitive OG command block CZcamsr, and LogDotZip used to do a lot of videos on command block creations, as "Only One Command" stuff was popular. Those things were kinda like data packs and less advanced - no crafting table recipes, no custom commands, no world gen changes, and some other things - but I kinda miss them. A lot of them were superhero stuff or Lucky Blocks, as the lucky block mod was SUPER popular - but there were some really creative ones.
Other people have remade full Pokemon games in Vanilla with command blocks, and there I think someone remade Donkey Kind with command blocks, although it ran at something like 1 frame a minute lol
