1 lb dry red beans
Smoked turkey meat
Chicken broth (family size-48 oz)
2 celery stalks
Onion
Red pepper
Green pepper
1 pckg andouille sausage
1 tbs minced garlic
2 bay leaves
Seasonings for meat & veggies: garlic powder, onion powder, creole, oregano, thyme.
Seasonings for red beans: S&P, Cajun, creole, cayenne, smoked paprika, parsley.

Rice
-Soak beans overnight. Use double the volume of water.
-Drain & rinse. Add to Dutch oven or large pot. Add smoked turkey meat & chicken broth. Cover & set timer for 2 hrs.
-Cut up sausage & veggies. Add oil to a pan & sauté until sausage get some color. Season to your liking. Add minced garlic towards the end.
-Add sausage & veggies to the red beans & turn heat down to medium low. Season to your liking. Add bay leaves, cover, & continue to cook until timer goes off, stirring every 30 min.
-Remove smoked turkey & shred. Remove some of the red beans & mash & add both back to the pot. Cover & cook for another 30 min.
-Cook your rice. Allow red beans to sit to thicken up. Serve with rice & enjoy!
