as far as I know, they're just pieces of sheet metal folded once, and attached to the inner wall of the outer cylinder with JB Weld. There are several other strategies to achieve the same outcome. Contact Paul Anderson for specific details. His email is given in the video description.
Why not have a fuel feed at the bottom just above the grate? If the gases can't go out the top they can be forced down to a vent, heating the burn chamber as they pass and giving a hotter, cleaner burn. That makes the stove a more efficient combustor but the heat must now be transferred to the food via convection thru a metal plate. The hotter chamber means quicker burnout, requiring replacement unless ceramic is used.
