Awesome build but may I ask whats going on at 5:40 and 1:20? Why is that step needed?
At 1:20 we cut a bit more so that bearing would sits better and to make less gap between fork and headtube.
At 5:40 we cut the paint to make surface flat and make bottom bracket sitting fully inside and straight which extend bottom brackets life and prevent squeling noices.

Not but in this case we wanted smaller gap between headtube and fork

Because by cutting in one spot saw will bend and cut it crookedly while rotating and cutting you will get perfect cut. We explained this in Cinelli Vigorelli Special White Vlog video 11:45.
It seems that you are aware of the charlatanism of the Colossi employees and you decided to make your own threads in the hub shell. It was a painful task to install a SG75 on the colossi low pro I received from them a couple of weeks ago, due to low quality control, parts of metal were chipping while I was tightening the taper. I'm already using SG75 in 7 other bikes, some of them I bought used, and it was always installed finger tight, like spreading butter on the bread. Then the paint on the seatpost was stripped, because they didn't install properly the seat clamp.
It’s not just them, most of the bike manufactures are not doing this final touches so we always cut paint of bottom bracket shell, clean threads, same for the head tube…
What's the theory behind grinding down the bottom bracket? Also, the head tube?
It could be paint overspray or the channel for headset/BB bearings might not be perfectly flat or parallel. So the point is to eliminate any potential creaking or play in the bearings.
Exactly that’s the case with bottom bracket.
Like this we make sure that bottom bracket sits 100% straight and because of that also last longer.
With headtube is the same case but here we cut bottom part a bit more so the bearing sits more inside headtube and there is less gap between headtube and fork.
