How to make EASY Gumpaste Recipe | Gumpaste | BEGINNER CAKE DECORATING

    Welcome to Arise Cake Creations first video!
    I’m sure you’ve all seen the delicate sugar flowers that adorn wedding & celebration cakes and believed you would never be able to make them! Or thought it will take years of practice to even get to a decent stage! Well, with plenty of practice and the right instruction you will be making delicate sugar flowers in no time!
    Let’s start from scratch! Making an easy gumpaste recipe. This is a Nicholas Lodge recipe, that I have adapted - I mix it for a much shorter length of time and make it by hand rather than using a mixer, so the egg structure stays stronger, incorporating less air so the finished gumpaste stands up to the heat and humidity I encounter in Thailand, it also makes It less fragile. That is why I love this recipe!
    Tylose or CMC - CMC stands for Carboxymethyl Cellulose (that's a mouth full to say!). Tylose is the brand name for CMC. So, they are pretty much the same thing. As you venture into decorating cakes chances are, you’ll end up using them. The purpose of them is to create hard sugar flowers, make fondant into modelling paste to create sugar models. Overall, it helps to give sugar creations a firm hold.

    Gumpaste Recipe
    Ingredients:
    125g Fresh or Pasteurised Egg Whites
    725g Icing/powdered sugar
    30g Tylose OR CMC Powder
    20g Vegatable Shortening (fat) (Trex OR Crisco)
    100g Additional Icing/powdered sugar for kneading
    Corn Flour/Corn starch - For rolling Gumpaste.

    Gumpaste is also known as Petal Paste, Florist Paste or Flower Paste.
    There are various different brands of pre-made gumpaste such as:
    *Squires Kitchen, Satin Ice, Wilton, Renshaw, PME to name a few.

      My recipe will work great in Florida. I have never made this recipe with gum tragacanth, so unfortunately I do not know what the quantity to add is.

      Thank you for your comment❤ I live in Thailand, and I have high humidity during the rainy season. This gumpaste recipe can definitely be used on rainy days. Once your flowers are dried and stored well. Your flowers will last very long.
      I do also have an alternative gumpaste recipe which is vegan, made without egg whites (or gelatin). It does take longer to dry, but it gives you time to work with it and make your flowers, especially if you are a beginner, it also stands up to rainy days/humidity.     Hi I’m new on your channel I liked your recipe it’s same as what my chef taught me but after I stored it in the fridge the next time I wanted to use it the gum paste kept sweating. Please is there a particular reason why it did that

      When you take the gumpaste from the fridge you need to let it come to room temperature before using (it may take a few hours to come to room temperature). The gumpaste will sweat at first due to the change of temperature from the cold fridge into the warm air. I hope this helps🤗🥰

      There are eggless versions, but unfortunately I have not done a video tutorial yet. I hope to do a video tutorial for a eggless/vegan version soon. I would also need to experiment with it to find out how good it is for making sugar flowers and if it is good with heat & humidity.       Thank you for your question. You do not have to use all the Crisco, it depends on what your gumpaste feels like. If still feels dry, add some more Crisco, if it feel too sticky, do not add any more crisco, you could knead in a small amount of corn starch/corn flour NOT icing sugar, since this can start to make it go to sticky as well.       • 4 Egg whites (½ cup)
      • 6 cup Powdered sugar/ confectioners sugar
      • 2 tablespoon Tylose powder or CMC
      • 2 tablespoon Veg shortening vegetable fat (Trex or Crisco)
      • ½ cup Powdered sugar (confectioners or icing sugar) for kneading

      There is an alternative recipe that does not use CMC or Tylo. The alternative is made with unflavoured gelatin & corn syrup. I have never tried it, so unfortunately I do not know how hard it will dry and how long flowers will keep for once made up.       Other alternatives that can be used to make edible flowers are Bean Paste (takes a long time to make) or Rice Paste/Clay. I have heard however they do not dry quickly and can crumble. This would not work for me, since I live in a hot & humid climate. I hope this information helps😊

      The gumpaste is edible, since it is made with edible ingredients. In order to make realistic sugar flowers to decorate a cake or displays, you need to use some form of support such as a wooden skewer or florist wire, these support are not edible. You can make flowers without the supports as well, to do simple decorations on cupcakes and cakes. I hope this answers your question and helps🥰🤗

    Is the egg whites safe , I mean the salmonella because it's not cook. How lng is the shelf life

      Thank you for your question. As long as your eggs are pasteurised, using raw egg whites will be safe. This gumpaste when wrapped up well in the fridge will last up to 6 months and several years in the freezer.       Thank you for your question. You can use gumpaste for figurines, however, you will have to work quick, since it dries quickly. I would suggest you use modelling paste (edible) if it is figurines for cakes. If you just want figurines for something other than cake or something you can eat. I would use cold porcelain - which gives you time to work with it, dries very hard and is not as fragile as sugar gumpaste. I hope this information helps🌸🤗

    Sarah, I did try this.
    Your recipe amounts to approximately 6 or 7 tsp of CMC or Tylose. Correct?
    While it came out really smooth after kneading, when I used it...it was ‘too elastic’ to get a thin roll.
    Imagine working with bread dough except multiply by 5 . It just kept trying to retract back to the ball.
    I hope the condition of mine makes sense.
    Though it came out decent (I mean... it did look like a fantasy type rose) rolling to get and stay thin...was exhausting 🥴😉😋 to cut petals.
    The other issue is that the edges seem to dry out faster even keeping them covered.
    I was used to the ease of Satin Ice. Not promoting them at all.
    As a beginner, I just purchased the first brand I saw to practice with.
    What did I do wrong and does one have to use all the Tylose/CMC called for in a recipe?
    I use a scale.
    This is new territory and most like bakers error on my part. I’ll try it again if you can ‘diagnose’ or attempt troubleshooting my error.☺️

      I am so sorry, that you had this experience when you made the Gumpaste😕 I weighed the CMC using 30g, I didn't do the measurements in teaspoon, so not sure if this may have caused the problem.
      I am presuming you did not use all of the icing sugar, when kneading the gumpaste once it was made? Also did you use all of the vegetable shortening? This recipe does not require you to use all of it, just enough until the gumpaste has reached the right texture.
      Did you allow the gumpaste to mature for 24 hours before using it? 24 hours in either the fridge or cool/cold environment. This step is super important.
      I have never had problems with it being over stretchy or retracting back, when I am rolling it.
      I have never used Satin Ice gumpaste. I used to use Squires Kitchen and a Thai brand many years ago, before switching to making my own about 6 years ago.
      The gumpaste needs to be wrapped up and any cut petals must be covered well - with a plastic sleeve/cover, then into a zip lock bag depending on the environment you are in. I also sometimes cover the gumpaste that I am using, with a glass and tear off pieces as I need it, and never have a problem with it drying out.
      It is a gumpaste that dries a bit quicker, that what makes it great for humid environments/countries. However, it does normally still allow you time to manipulate the petals a bit.
      These are some of my trouble shooting tips, without seeing it, it is hard to tell, what else could have caused the problems.

      You could try making a much smaller quantity, maybe 1/4 of the recipe to see if it makes a difference -
      Fresh or Pasteurised Egg Whites - 31.25g
      Powered Sugar - 182g
      CMC/Tylose Powder - 7.5g
      Vegetable Shortening - 5g
      Powered Sugar - 25g (additional for kneading)
      I will actually be posting a Gumpaste Rose tutorial this week. Keep an eye out for it. It may hopefully help to give further insight on how to handle the gumpaste.

      It is a widely used recipe formulated by Nicholas Lodge, that he shares freely. I have adapted so it works very well in hot and humid environments (since I oive in Thailand). I'm so sorry, that you paid for it in another tutorial group😔
      But now you have the recipe, be happy that you can now use it to make beautiful flowers with it😊
