Canning Tomatoes with the Kees

  • I was able to spend another day at Johnny and Linda Kees’ home as they processed and canned tomatoes from their garden. Because of their high acid content, tomatoes are among the simplest vegetables or fruits to can. The jars can be filled and placed in the pressure cooker water bath when cool and then brought up to pressure for only a few minutes before being turned off and allowed to cool down. Unlike low acid vegetables which need to be held at pressure for longer prescribed periods. In a few weeks, I hope to be back as they start harvesting, processing and canning their purple-hulled peas.
