- Is rare steak safe to eat?
A lot of people are grossed out by the idea of raw or rare steak, and many folks believe that it's unsafe to eat. Here, I explain the science behind eating rare beef and other red meat. We also take a look at chicken, and if you should be eating that rare, too!

My whole life I grew up on well-done steaks. I honestly did not even know that you can eat it undercooked. Until one day I got a job at Outback Steakhouse in my town. I had to go through some classes on how to understand steak before getting the job so I can be knowledgeable in explaining it to customers if they asked. After my training, I was offered their famous sirloin and they asked me how I wanted to cooked. I honestly didn’t know how to answer the question as I only had eaten well done my whole life. So they told me we will cook it in a way that we think you need to experience and I trusted them. They did like a medium to a medium-rare and from the first bite and on I never touched another well-done steak again. My preference whenever having any kind of beef is medium to medium-rare depending on the cut.
Science baby
Same. I like my chickens rare to medium rare.

Rare steak doesn't it feel like eating raw meat? Or may you have to chew more as thats not tender enough?
@@m.hamzakhan4315 honestly a good rare steaks internal temp is 120-130, so it does render the fat enough to make them tender, the whole thing with rare is to keep the temp constant to render fat, while still cooking the inside long enough without losing its "color", rare is a brighter shade of red then blue rare, blue rare is basically raw still

Thanks for this! Very informative!!!
Since I was a young boy I’ve always been against going over medium rare cause you lose the flavor and it toughens once it hits medium. I’m the only rare - medium rare person in a family of well done lovers. I’ve gotten my folks to try and enjoy medium rare but my sister won’t budge. She tries to force me to stop liking medium rare and conform to liking well done.
Is it better now or does she still insist on well done?
You ask your sister politely, yet firmly, to leave.
@@typingcat It's the only way..
Congratulations mate
A quick search in google will reveal that more than 80% of beef in US is infected with parasites. Their eggs reside in muscle aka meat. It is unsafe to eat rare beef. Your sister is completely right. This lady in the video completely skips on this issue. Besides bacteria, there parasites in both beef and pork. Only correct temperature will kill those.

Your information is very, very well done! Very detailed and you handled all the 'What if?' questions. Was skeptic at first but boy was I wrong. You are awesome! Thank you! ^^
WELL DONE? YOU MUST MEAN MEDIUM RARE!
Jess I am curious you say ground meat is the same deal however, European countries such as France will ask you to specify how you want your ground beef burger, if not specified they will assume you want it rare and... what about steak tar tar? I had the hamburger de cheval medium rare in Paris and never had an issue.
Butcher handles it differently. You have to cut the meat out a certain way to eat it raw
France has better food safety standards.
Thanks for explaining!
I needed this , I'm so burnt in the head when it comes to food lol
So don't push a temperature probe in till later in the cook?
Informative video. Thank you
if using clean equipment, could you sear your meat before putting it through a grinder to have a safe to eat rare burger (save for probably some cooked bits that get mixed in)?
Well typically, not every parts of the cow is necessarily “safe” to eat rare. If your using ground beef, I highly recommend eating it well done. You could leave some pink in there if you want (medium well) but I highly recommend not eating a rare burger.
+Dekz. No, I would argue there are too many cuts and time spent to keep such safe for long. If you want to eat a raw cooked burger. I would argue the best way to do it is to have a steak rare cooked on its surfaces and once done. Cut into slices from the top and put on a ready burger bread with the rest and eat it like that. That said, this would overall be a high quality burger and maybe not the best way to serve quality meat! :D
Hol up, if you use the thermometer to prick a hole in the steak, arnt u pushing the surface bacteria into the steak like you just explained?
So what if I sear the outside of the beef, then run it through the grinder for ground beef for burgers, then can I have my burger pink?
no
Yes that is absolutely fine, that's how they make Tar Tar (raw beef dish)
Cook the outside and only use the raw inside!
Says "beef animal" instead of cow 😂😂😂
Technically "Cow" is not accurate. Cows are female cattle who have had 1 or more calf. Typically cows are used for dairy. Steers are typically what most of your steaks are. So saying beef is correct, as you really don't know rather what's in front of you is cow or steer.
Mrsnotorious S so steers are cows
@@jacobstokes1620 no steers are castrated males. Bulls are intact males. Hefers are female's that have not had a calf. "Cows" are female's who have had 1 or more calves 👍 not all cattle are "cows." The term cows is used incorrectly all the time.
@@TheMeangreen6 I appreciate this information I didn't know, thank you
@@TheMeangreen6 so is the meat different?
If you think rare steak is wrong..then you should stick to just eating chicken, anything more than rare or medium rare is a waste, no debate needed
If you like well done, then order the chicken or as Hank Hill says “we ask them politely yet firmly to leave”.
Depends on the place I go but I usually cook my steak a little on the rare side
Good presentation. When packing houses jacarrd ( brand name) a steak, it’s under the most sanitary conditions, so even though there are always some bacteria present, it’s minimal as long as the meat maintains a proper temperature before you buy it. If you needle your steak at home, it’s ok as well as long as you eat your steak asap after tenderizing and cooking. And buy your meat from a reputable supplier! 😊
So lets say you have a rare steak -- can you cut into it, and refrigerate left-overs? How does that work w regard to food safety/germs?
Rare should still reach a high enough temp on the outside to be safe. If it's not, it's undercooked
I'm german and I'm surprised how accurate the pronunciation of "Schnitzel" was at 3:40. Got the "Sch" like in english "sh" perfect. Well done (lol)
Also great video, learned a lot. Thanks!
So it is safe to eat steak when the top is cooked and the bottom is cooked and the middle is still dripping bloody???
Yep
I love rare. Btw I like rare but it's not rare enough so should I start eating blue?
Blue rare
Great video!
What is Fahrenheit? could you please tell us in Celsius, like the one which is used by literally almost everyone on the planet ?
no, you're from one of the 99% of countries who do it wrong, imperial everything ftw
Thank you, i am learn english so this is a really help me to learn about the food in england
Could you technically cook at 175 to leave a little extra breathing room/margin for error and just watch it closer or is >165 just gonna ruin it?
I have searched and searched and I am looking for the juice from a rare steak under a microscope and it’s not there why?
I found this video because a restaurant just served me a very rare 16oz steak instead of medium rare as I had asked. I don't like to complain so I ate it and worried about it after the fact.
It was very good but got cold fast. That was the only drawback.
Honestly I was hoping to discover that there were nutritional benefits that came with less cooking.
But at least I did get educated by an attractive educated woman. ;)
Definitely coming back for more
You were right, I didn't like thinking about a poop-soup. Had no idea why chicken was so risky! Will still eat chicken tho dw
I just had that tenderised steak and made it rare ? Am I a bit fucked ?
Okay now I understand that it's safe, may I still ask why do most people prefer to eat it medium rare and why not fully cooked? Does it taste better half cooked or are they lazy to cook it all the way through?
My opinion medium rare only taste better if it’s cooked properly. Most people cook it so that it’s still mooing
It’s more juicy and tender
It tastes better rare or medium rare, well done is almost tasteless. Also, rare and medium rare are actually cooked. Rare beef has a different texture to raw beef. It just isn't overcooked.
A steak well done is a steak well ruined, rare or blue is the only way, plus it's more fun to eat when the meal is crawling away.
Thanks for explaining the blade tenderizing process and why it's not good for things like prime cuts. Looks like I will be skipping Costco for my beef purchases from now on.
If I use your advertised meat thermometer I have to poke the meat and for that have to cook it well done, right ?🤨
Te queda super los cortes, un abrazo desde Tepotzotlan Estado de México
There's also a reason chicken (and sometimes steak just because it's kind of boring unless it's Wagyu at that point) don't even appear on the menus at Michelin star restaurants - because with good provenance and sanitation, other meats do not have the same bacterial risks, therefore squab and duck can be served somewhat rare, whereas with chicken, a restaurant only serves rare chicken once.
My family always orders well done or cooks well done and i grew up with that. Eventually i started ordering medium well and next im going to medium. Idk if ima go lower than that tho. Perfect medium for me.
I'd say give it a go if you're not immunocompromised. I think it tastes great.
Perfectly explained. Thank you ma'am
Side note: It has also been found that cooking meat for an extended period but at a lower temperature than the "safe" temp will do the same job of killing the bacteria. For example, you can cook chicken to an internal temperature of only 145 degrees, provided you hold it at that temperature for a long period, I believe it's 2 hours. I sous vide my chicken breasts at 152 for 2 hours because I didn't like the spongy texture of 145 degree chicken.
I'm 23 and never had any other type of steak besides well done.. Apparently my family thinks eating anything besides well done will give you parasites, food poisoning, etc.. I'm thinking about going to a steakhouse somewhere here in Socal to try it out cause I'm tired of eating steaks that taste like fisherman boots
Let us know how it goes!
same I used to eat steak well done and my family said that too, I'm educated now and I know you can only get sick from eating an old cut of meat, now I eat it still mooing! and I never looked back. I can literally eat it raw, blue rare, rare
@@xrellx all I can say is.. I hate myself for missing out all of these years 😂😭

Thank you useful information
So bacteria can’t or won’t go into the meat on it’s own eventually at some time if the meat is left out at room temperature for a long time, I thought when meat went bad it was because of bacteria and germs, exposure to air, which is why we store it in a container that seals properly and in the fridge, or cook it and keep it hot, if food isn’t reheated to proper temperature, can’t it make you sick, I thought it had to be kept hot to kill bacteria or cold to freeze it, but if there’s no bacteria inside the meat then is it ok to leave it out or reheat it just a little bit to warm it up
I wouldn’t recommend leaving it out because of rotting.

@Robot killer that's a very USA centric viewpoint but yes that is generally solid advice

Yeah if you're not buying your meat from some backstreet shithole country for 90% off flash sale you're not gonna get parasites.

When I order or cook a steak I like it so bloody that I basically just knock the cows hooves off, wipe its ass and walk it through a warm room
Good to know
I have always eaten meat well-done. I tried a steak medium-rare out of curiosity and my body loved it. Whenever I eat rare to medium-rare red meat I feel better and like I have more energy.
Makes total sense. Look up “carnivore diet” and keep an open mind. It sounds up your alley
But what if the cow is infected with something? Wouldn't that be inside the beef?
how about Taenia Saginata parasite, or cow tapeworm that is transmitted from cows to humans. Their "eggs" are in muscles and become adults in humans. They can be killed at prolonged treatment in the freezer (6-10 days -10C) or cooking it thoroughly to at least 160F. I choose safety in comparison to meat tenderness.
If I had to cook my steak to 160, I wouldn’t bother to eat steak. 🥩
See that's what these turds fail to understand. They choose to overlook health for their own shade of perverted taste of steak. Good on them, being the victims of food poisoning.
Do you fucking think American farmers will ALLOW THAT?!?
UNLIKE Asia, where food regulation laws can be somewhat sketchy sometimes, American food laws are SUPER STRICT.
