As some1 who has been a waiter before, I can tell you there are so many people who demand changes in the dishes, and expect us to serve them food to their exact specifications.
It depends on how reasonable you are. Like some of my regulars loved a certain chicken starter, but our chef used to put brown rice in it, and customers usually don't like brown rice, so if they said, we would put white rice instead.
But then came people who expected us to change the dish fundamentally. What many customers don't realise is that most restaurant already have the prep work done, so we can't fundamentally change the dish. Like I can make the dish less spicy, but the gravy is already been made, I can only tell the chef to not add more spice, and add some water into it. If you expect us to make the gravy from scratch for you, you are welcome to wait for 30 minutes.

Restaurant etiquette is different depending on where you’re from, in U.K I’m it’s quite relaxed and treating waiters like you would your friends I reckon is universally appreciated cuz you never know if you’re rude they’re the ones bringing you your food and anything can happen between the kitchen & your table. Of course we all have friends who eat way too fast like it’s their last meal on earth those friends aren’t made for restaurants. People who are picky regarding food should eat at home (in my opinion)...
