    Here are some tips and tricks for preparing, dehydrating and storing your vegetables:
    • I am dehydrating 7 vegetables and herbs, but you can dehydrate your favorite ones.
    • Blanching vegetables is briefly immersing them in boiling water. This destroys enzymes that would otherwise survive the dehydration process and cause the food to decline in quality over time.
    • Also, blanching helps vegetables keep their colors and flavors.
    • Store all your dried vegetables in airtight containers in a cool, dark place.
    • I’ve seen posts saying you can store your dried vegetables in the refrigerator or freezer to extend their shelf life, but I’ve never tried it.
    • Do not store your dried veggies in damp basements, under-sink cabinets, or any other place where your stored vegetables will come in contact with water.
    • Moisture is the number one enemy of dehydrated vegetables.
    • Vacuum pack and use oxygen absorbers for long-term storage.
    • Save the bits and pieces from your veggies for your broth / stock
    • Use the blanching water in your broth / stock
    • If you are planning on storing dehydrated foods long term, pls look into vacuuming sealing the containers for maintaining the freshness.
    • You can use dehydrated vegetables in casseroles and baked goods such as bread

      @A. Carpenter - I put bentonite clay in tea bags and tied the top tightly to prevent the clay from spilling.       Hanan Navaf - If stored in an airtight container away from air, moisture & light, 4-5 years. The mold growing on your veggies will tell you that it was not stored correctly. I’ve read that the shelf life is extended if you store it in the refrigerator, but I’ve never tried it.
      I live in high humidity climate and have a few damp areas in my home, so I definitely need the silica gel to prevent mold.
      If you live in a dry climate AND store correctly, you may be able to do without moisture absorbers (you should do a small test batch first). Thanks for watching!💚

      @@NaturesDarling when I was watching, I didn't see how long you said to leave the carrots out for. but after I commented, I saw. my only question is where do we leave them out? like to we leave them outside or inside for the dehydrating part

      quackitq - it’s blanching, not steaming - and I wouldn’t skip that part. Blanching destroys enzymes that would otherwise survive the dehydration process and cause the food to decline in quality over time. Also, blanching helps vegetables keep their colors and flavors. Thanks for watching! 💚

      I thought skipping that part would be better to conserve the vitamins and minerals. Blanching is just to put them some minutes I hoy water or do I have to put anything else. Also can I mill them to do like vegetable cream.

      quackitq - blanching 2-4 mins (depending on the veggie) is all. Not sure if you meant mill them before or after dehydrating. If you meant after, then they would be have to be very dry and they would be powder (sorry if I’m misunderstanding). Thanks for watching!💚

      Xiomara Ocsterwolde - I used a dehydrator (link in the description box) in the video. They can be dried in the sunlight, but you will need to turn them regularly and protect them from flies / insects etc and take them indoors at nights. You can also dry them in the oven on the lowest setting, but you should turn them regularly and keep a close watch because the oven temp is hotter than the dehydrator and may burn them.       Ingo - 1. if you live in a sunny climate, you can dry them outdoors (turn the pieces often & bring them in nighttime) 2. You can dry them in the oven on the lowest setting (turn the pieces over often and keep an eye on them or they will burn) 3.       Avinash Madhukar - spread veggies on a cookie sheet and put in sunlight or your oven on the lowest setting - you will have to keep turning the pieces over to dry evenly (keep an eye on the oven or they will burn). Thanks for watching! 💚
