  • The "Backstrap" loin is my FAVORITE cut from a deer. This video shows the entire process of making this southern delicacy, from harvesting the animal to serving it. There are many ways it can be prepared, but it is hard to beat a good cast iron skillet! I have developed this method over the last few years and it is a very simple process.     When I was a young'n, I learned the hard way about the silver skin...I chewed and chewed til my jaw about gave out. I finally had to give up LOL
