  • We got a new smoker! Check out our latest addition to our BBQ arsenal, the Oklahoma Joe's Marshall. Its much more challenging than the Highland offset we had before this one.

    Keep it lower in temp from the beginning and it’s easier to manage. Once the temp ramps up it is tough to bring back down due to all the air leakage. Once you get it around 200-250, shut the vent nearly completely closed

    I too use a foil pan as opposed to wrapping but wanted to note something… the roast does not absorb any of the rendered drippings. Keeping it in the pan causes it to braise but you’ll never reabsorb what has rendered out. Nonetheless, at the end, after it’s pulled, you can reintroduce the jus ( which I do) and it makes for a tasty product.

    would it have been so hard to have designed a slide out drawer for that charcoal basket

    Using smaller chunks of wood made it a little easier for me

    Would it be easier to pull out the basket with the ash tray under it at the same time? then you would not have to tip anything to pull it out. Maybe that is not possible, I do not own one.

      Yep I was going to mention that. All you have to do is pull out the ashtray and the basket gets caught in it. Try it out.

    As mentioned below, I don't think this is supposed to be used as a wood burning smoker. It's a charcoal smoker so you should probably mostly fill the basket with charcoal, then dump lit charcoal and smoking wood on the top. Then set vents to the right amount to get the temp you want. Absolutely heat soak your BBQ but going as far over as you did makes things a lot more difficult. If you creep up on your temp, your BBQ will be heat soaked sufficiently and you'll be able to dial in the temps. If the BBQ can seal up properly that is. I like the look of this unit but don't like the sound of the air/smoke leaks that seem to be common.

    Assuming a drip or water pan you can just put in the charcoal grill basket?
    Considering this model to consolidate my smoker/grill needs having gone to a smaller outdoor cooking space.

      There are probably several options such as that to solve the situation. As several people have pointed out in the comments, we were using it incorrectly. This is intended to be a charcoal fueled smoker not to be reloaded during a cook.

    I bought one of these a month ago. The only real issue i have is the smoke box lid. It doesn't fit properly and even with gaskets it leaks like a sieve at the curve. Even with the gasket doubled at the area it has a gap you can see.

    If you will fill it 3/4 full of charcoal let it catch then add the wood on top, you will not have to refuel for at least 8-9 hrs. If your wood is too dry, it will burn up faster.

    Yea this guy is definitely a beginner when it comes to a charcoal basket. I don't think he realized your suppose to fill up all the way up and add Lil wood chunks. Not made as a stick burner

    Use a tray instead of the basket for fuel, and don't add so much fuel will help control the temp....

    Could you use the Marshall without the basket to make adding fuel easier?

    This is a charcoal smoker to be used similar to a Weber smokey mountain or a uds. This is not a stick burner.

      I ran mine as a stick once or twice. Gotta remove the basket and put down a grate for the fire. It was fun, but not feasible

      There is a slotted charcoal pan under the main grates that grease can drip down through onto the fire.

    I've been charcoal grilling/semi-smoking with Weber Kettle for 10+ years and looking for a smoker. Was about to get an offset and then found the Marshal. Would you recommend it to someone like me or should I stick to an offset? Thanks!

      I would definitely get an offset if you have never had one before. There is alot more versatility in something like the OKJ Longhorn or Highland than the Marshal.

      I like mine and it is as easy as a WSM to control and run. Fill the box and fire it up. Toss in some wood chunks as you go. Also check out the longhorn reverse flow. More firebox space for airflow gets a cleaner burn. The reverse flow stack is closer to the grate and you get results more similar to a bigger offset.

      Negligible. It drips down onto either the charcoal tray or the fire.

      Not as a first time smoker. It takes alot of previous knowledge and experience to dial in.

    What are those clamps you have on your door? Where did you get them, and are they worth it? Thank you!

      Hey Brian!! This clamps are from OK Joe's. I bought them at The Smoke Box Unlimited grill shop in Murfreesboro TN. I paid $20 for them. They help to hold the lid in place tighter to the gasket to mitigate heat/Smoke loss.

      Sounds good, thank you. Just fired mine up for the first time. It’s a cool smoker that I’m going to need to keep playing with to get the temps dialed in. The clamps will help I think
