The green dip (น้ำพริกหนุ่ม) particularly goes well with fried pork skin, others are maily for red dip (น้ำพริกอ่อง). In Chiangmai "Warorot" market, the green drip sells together with fried pork skin in every shops.

Those are northern specialties and very friendly towards foreigners or even for Thais from the other parts. Red drip (น้ำพริกอ่อง) almost not considered as Namprik in my opinion 🤣 it was like red sauce in spaghetti. Kang Hunglay or pork braised will surprise you with ingredients from how it made of.
Jira yes! The red one almost tasted like bolognese sauce! It was so surprising.

Bael is a subtropical tree thats woody round dry fruit is what originally gave thai iced tea its orange color and flavor!

Nam Prig Ong is the tomato Chili Dip . Nam Prig Num is the Green Chili Dip. And the Pork belly Hang - Lay Curry there is Tamarind juice inside its a Little Bit fruity make you Taste maybe like there was tomatoes inside . Enjoy the meals . Northern dishes are not spices as Isaan food and can not hardly compare to the southen food.Since you are so fun of vegetable dipping Num-prick,try visit Num prick Nidtaya shop at Banglumpoo bkk where there are various Num pricks and curry paste available.
