  • Well, the secret ingredient in my mapo tofu recipe that will give an extra “oomph” of flavour is none other than - PI XIAN DOU BAN! (bit.ly/Lazpixiandouban)
    This ingredient is the backbone of Sichuan cuisine which comes from the town of Pi Xian in Sichuan and is protected by designation of origin. That means that the product needs to satisfy stringent criteria before it can be labelled Pi Xian Dou Ban.
    In this video, I show you how to make my easy-to-do mapo tofu dish, with ingredients that are easily sourced from RedMart and Lazada.

    I'm glad to see someone recommend firmer tofu. Everyone else recommends silken tofu but I find it requires far too much effort to prevent it from disintegrating during cooking.

    Living in Germany, bought the mentioned "Secret"-paste months ago, because the old lady in the asia shop told me that this paste is from the sichuan region and so it's the authentic Paste. Good that you mentioned it her

    Dr, G6PD cannot take broad beans. So what other alternatives do u suggest? Can ordinary fermented soy bean add chilli padi and Sichuan peppercorn do? Appreciate your advice. Thanks.

      You can use chilli bean paste from Hong Kong or Taiwan which uses soya beans instead of broad bean

      I don't have a specific brand to recommend. As long as it is Pi Xian Dou Ban, it should be fine.

      You can't. But you can reduce the amount of other salty ingredients in the dish.

    This video is akin to someone who's been eating Domino pizzas all his life, and then all the sudden discovered authentic Italian pizzas, and then went around blogging about how mozzarella is such a secret ingredient.

    Pi Xian Dou Ban Jiang is **NOT** a secret ingredient; it's the signature ingredient in the dish! That's like saying, "What's the secret thing that makes this automobile move? It's... AN ENGINE!"

      Until recently, we couldn't get Pi Xian Dou Ban Jiang in Singapore and most people were using dou ban jiang from HK. Its like saying the secret to an authentic Napoletana pizza is San Marzano DOP tomatoes when we have always been using other tomatoes as they were not available. That is what I meant.
