It's not the soy sauce that makes it fried at all, it's technically baked in this case. Although oven-frying is another name for it, they might not have the proper materials to do a stir-fry or anything of the sort. I hope this is atleast some clarity

well of course the tomato will smush if you're gonna squish it and not actually cut it.
Small tip from pastry chef:
Make a tiny cut where you want to start slicing, then cut into it and cut from there.
Flip your tomato skin side down and it'll make cutting much easier.
