Hi JP! From Baguio here, in Slaughter Eatery or Carinderia a lot to mention particularly, we call it half-half. Half order of each tinuno with blood sauce and skin of cow with papait (gal bladder). With rice and bulalo soup. Nako po champion talaga!

When it comes to bakareta, bulalo and pinapaitan.. the best for me is Minda's Eatery yung unang stall na pinakita. Sa mga pupunta ng Baguio try nyo din po. Sulit.
I remember eating there often as a kid. Ang problem lang kasi walang parking space jan. Kaya di na kami pumupunta. Mejo hassle kasing magcommute ang buong pamilya jan.

Nah many secret karinderia in baguio . I love looking around to eat in karinderia . A karinderia which cook delicious pansit is kinda pansit canton along the session road. They give soy sauce with chili and soup.
Must try the Kinigtot in the bonifacio road behind the slu school but this is server only in the morning around 6am. this where the students go " Solidad restaurant"
I think "tinuno" of Baguio is somehow synonymous to "polpog" of La Union except that with polpog, the thick blood sauce is mixed with the inihaw na meat (pork until crunchy), garnished with onion, ground pepper, salt, vinegar, ginger and other ingredients. 😋👍👨🍳
Hello po. "Tinuno" is not a name of a dish po. It is the ilokano word for inihaw. In ilokano, we call that dish tinuno/intuno nga baboy ken dinardaraan sauce. the other chef basically told chef jayps that it is a grilled pork with dinuguan sauce. Pulpog is also "tinuno" in a sense because we grill the pork first before we mix it with other ingredients to create pulpog. Peace out.
