In many ways, Monica and Chandler were the parents of the show. Monica fed and took care of everyone, she was the glue. Chandler was well off enough to provide for both Joey and himself.

I think this situation is a way to make Chandler be part of Thanksgiving celebration again and start of their everlasting bonds. In Chandler's speech he was grateful although it sucks and in the end they're all happy.

I find it interesting that the writers chose to focus so heavily on Thanks Giving, which is such a nothing holiday. They even gave Chandler a traumatic backstory for it.
