  • Bajan Bittle - A Culinary Excursion
    PUDDING & SOUSE
    SOUSE
    2 lb Pork Shoulder or Feet, Ears, Snout, and Tongue
    1 large Onion, diced (optional)
    2 Cucumbers, grated
    1 Scotch Bonnet or other hot pepper, finely diced
    Juice of 3 limes
    Parsley, chopped, to taste
    Salt, to taste
    PUDDING
    1 1/2 lb Sweet potato, grated
    1 1/2 tsp marjoram
    1/2 Thyme
    1 tsp Chives, chopped
    pinch of Sugar
    pinch of Salt
    2 tsp Oil 2
    2oz butter Scotch Bonnet or other hot pepper, finely diced
    Browning (optional)
    Method
    1. Boil the pork in salted water, until tender. Stran.
    2. Chop cooked pork into 1" cubes. In a large bowl combine the pork with the cucumber, (onion), scotch bonnet, time juice, parsley and salt, to taste
    3. Cover and refrigerate until chilled.
    4. Combine all of the pudding ingredients in mixing bowl.
    5. Steam until tender or bake in a greased baking dish until an inserted toothpick comes out clean.
    6. Serve the souse cold with the pudding.

    Hi, My lovely grandmother, use to do pudding and souse every Saturday , White pudding and black pudding , and we had sweet potato also, I am 69 years Old now , l really miss those Saturdays.

    I’ve seen many videos of Bajan pudding and souse. Your’s is the best. This is how I know that this dish supposed to be prepared. I don’t eat meat anymore, but I do remember taking my bowl down to Redman Village every Saturday for my pudding and souse. Brings back so much good memories. Thank for sharing. May Gods bless you.

    The best pudding and soused I ever eat was my and my cousin lucine from black rock she did it her way not the real old fashion way when the meat is finished cocking you put the meat In lemon and salt water then you wait the meat look fresh and well season then you mix the meat in the pickle and why she forget the main flavour onions.

    Do you ever prep the sweet potato in casing and how do you stop it from bursting? I steamed mine in a 3 layer bamboo steamer, however to no avail. Thanks.

      The trick is not to over stuff the casing otherwise the steam will burst it so you give it a little room for steam and expansion

    If you mean thyme juice in the ingredient list, you should edit and change "time juice".

    Ok, thank you to those who called me out for stating the ingredients were not listed. MY APOLOGIES! However when I go thru an entire video and it reaches the tasting and I still haven't seen anything I turned off the video. Maybe posting your ingredients and directions at 15:49 of a 16:18 video, 29 SECONDS before the end of the video isn't the best way to go.

    Great job hun,but i dont like at the end that u use the spoon to take out the souse and then used the same spoon to take out the pickle,and im a person dont eat pork,u should have different spoons or fork etc,just saying everybody is different love.
