I whisked the custard a lot like it shows in this video. I'm an avid baker BTW. My cream is solid, but not as solid as it should be. it's the consistency of instant pudding thick, but not firm. Is this from over mixing?

Wouldn't it have been just easier to cut the pastry dough before baking or is there a reason to do it this way?

Yea you want them to be flat. If you cut before they will curl up. Bake whole sheet with another baking sheet on top to keep flat and then at end remove baking sheet to finish cooking.

I'm glad this recipe uses U.S. measurements and ingredients. The last video I saw of this dessert was so British. I don't know or care what corn flour is. I don't know or care what icing sugar is. My oven only uses Fahrenheit temperatures. I like your video a lot better, except the music (but that's why there's a mute button).

Corn flour is just corn starch.

It’s simple. Just convert F to C. Icing sugar is just powdered sugar. It only takes a google search.

I’m American but I moved to Britain a couple years ago and it’s easy to learn

You can find several recipes for the pastry, but it’s too labored, it’s better buy already done, and plus the butter is special, difficult to find here in America 🇺🇸. Trust me I did try it and didn’t come up like that, !!!😊

Why can't you cut it before you add the filling and icing?

I don’t know why people make videos without verbal instructions. No one wants to hear the music.
