fresh ingredients

200g tofu
1 red pepper
1 red onion
80g mangetout
200 ml coconut milk
250g cooked rice
1 lime
raisukaree paste

method
-
cook rice as per packet instructions + set it aside
dice your veg
then slice tofu into cubes
In a bowl mix 120g raisukaree paste with equal parts coconut milk
shallow fry tofu in wok until golden
remove + add your veg
cook for 2-3 minutes
add the raisukaree sauce to the wok + mix
then add tofu and stir together
serve on a plate with rice + garnish with a wedge of lime - Jak na to + styl
Got my WAGAMAMAUK SAUCE from waitrose and trying to follow this recipe but at 1:15 it shows the chef pouring a clear liquid from a small bowl onto the stir fry veg - No subtitles and no mention in the "method" so what is it
Tofu gets removed from a pan and then pan gets cleaned from oil. In dry pan put veggies, fry them for 2 mins, add 1-2 tablespoons of oil (liquid you mention on 1:15) and fry one more minute. Then add paste mixed with coconut oil.
As a ex wagamama chef, this is how they train you also. They often don't explain wtf is going on, just expect you to read from the book
When I cook tofu it’s quite dense
In the restaurants it’s very light - how can I achieve this?
I think they may use Tofu Puffs (deep fried tofu), you can buy in oriental supermarkets ☺️
