Meg, there will be little difference in the corn you eat soon. The longer it is frozen, the blanched will be better. When corn on stalks get the little divots in the kernels from hardening, roast them on the oven on the racks. Let them get brown. Cool and enjoy. Do the same thing with corn that gets hard all over. We begged for it as we grew up and so did my kids years later.

I actually prefer canned green beans over frozen. My folks and grandparents canned every summer. I remember my mom taking us 4 girls to pick strawberries and my mom picked alot. The work was done when she told us it was done. In aeason we would have fresh corn, tomatoes and cucumber salad for dinner. Good job everyone!😊

Never underestimate the power of latent learning! We store such a lot of information by simply watching others perform tasks and then recall that information when it becomes pertinent to our lives. That's why it is so important to allow kids to watch and help you even if they don't really seem to be learning at that time! I learned so much from my parents, grand-parents, and siblings without having been "taught" merely seeing them doing their stuff!

  • @BirdYoumans
    @BirdYoumans Před 11 měsíci +1

I was just sitting here thinking how fortunate for your kids they will grow up know that money doesn't grow on trees and the food doesn't grow on the table lol! And they are learning already what it takes to put it there. That is such a valuable lesson to learn. And then you start talking about basically how they learn both good and bad by watching. Spot on. I have always enjoyed watching your family dynamic. A large part of why I watch. ❤❤

2 Yrs ago, every pint jar I used would crack like that! They were all new jars. Makes me wonder if there has recently been a change in their manufacturing process. Its so good to see all the preserving going on. I'm sure the reason for all the poor health of people up through age 65 is connected to the processed foods. My parents lived to age 93 and 100 yo, I am to live that long, I'm 61 yo now & free from Rx meds - I'm sure its because I focus on eating real food. Thanks for being such wonderful examples of growing and eating real living food.

My father in law was diagnosed with cancer at 82, he had eye drops for glaucoma and took a multivitamin and fish oil tablet daily. He's always been a keen veggie gardener and never a sweet tooth. The heart specialist said he had a heart of a 35 yr old. Doctors were shocked at how healthy he was, and that he wasn't on any medication. He's now 89 and has developed Parkinsons, it's killing him quicker than the cancer, fortunately he still has all his facilities and a great sense of humour.

I love how all the kids help with all the work. You might try cooking your fresh green beans with small potatoes, carrots, onions, garlic, and bacon for one pot meal. I'm sure your kids will be able to do the same as young adults if they like growing and persevering vegs. Even your boys. My brother had to teach his wife how to pressure can cause she didn't know how. It really helps having 2 pressure canners! When one canner comes off, the second one is ready to go on. Maybe next year you can get a 2nd canner!

I just adore seeing the fresh produce coming out of your garden then saved on shelves or freezer for many future family meals around the table together. Such a good idea Meg to have the dried beans already prepared and ready when needed instead of wanting some when it would take too long.

Oh my that brings back memories I would freeze everything. But I would put up 365 pints of everything so we could have it at least one time a week for a year. Thing that warrants out was putting up the corn you got a short window before it goes to good it's ready to we left it too long. We have a bunch of grandkids and they loved so seeing y'all all work together pulling it and shucking it all we were exhausted glad when it was finished and they all went home with corn. So glad we got so they can look back on what we did together

My children are grown now and have children of their own, but I grew up on a homestead and helped mom can hundreds of cans of tomatoes, greenbeans, beets, carrots, jams, jellies, apples and many other vegetables. Tomatoes alone we canned whole tomatoes at least 150 jars a year, and about 75 jars of tomato plants. We always planted 45 to 50 plants. a year. We also always had a milk cow and would raise a steer for meat. We also had chickens. And even though I could rarely have a garden when my kids were growing up, mom and dad always had left overs and let us have them to can. But like you meg, I have always cooked from scratch. All of my children and most of my grandchildren can cook almost any cuisine you would want. I have this pallet where I used to go to a restaurant and find something I would like, and I would go home and duplicate it. Whenever the family gets together, we all cook. Rarely do any of us ever eat out. We always seem disappointed with food eaten anywhere but home. Kudos to the both of you in raising your kids right!

I have fallen in love with the Hollar family.
They are excellent role models that any family can emulate. They, including the children, are so hard working. The kids are well behaved and well mannered.
I like it best when they bow their heads to say grace. Gratitude to and trust in God are becoming so rare.
I do agree with Ben and Meg about garbage in garbage out.
Children often will not do what you tell them to do but will do what they see you do.
So parents have to be extra careful about living ethical, caring and moral lives if they want their children to become good human beings.

Canning comes back to you preparing for the summer crops. I'm 69 and like Meg we watched from great grandparents, grandparents, and parents to ourselves. Shuck corn snap green beans purple hull peas. Anything a bushel basket could hold. Grannie died late 80's. Uncle was an alcoholic and use her canner for processing moonshine.. county sheriff came out for his complaint of his piglets being stolen.. arrested and news paper sent story to associated press (ap) . Mom and here sister had a huge laugh. Grannie rolling over. HER CANNER. Keep canning everything. Blessing

My mama and grandmother canned, best green beans, sweet pickles and bread and butters, even yellow squash pickles, tomatoes were all mamas usual canned and maybe blackberries. She did this primarily until I went to college or started helping dad at the bath shop. By the time I had my house in 1992 she wouldn’t teach me how to can, said it was easier to go buy at the store 😢. So teach your kids, all 5 how to do it, start with something simple, even little Buggy will remember something, after watching her work in the greenhouse. My grandmother was a country girl from Tennessee, and she grew a good sized garden even for herself or two, mainly to save money, and the great flavor! She worked at Montgomery Ward sometime after 1958 I think after her husband died, I never knew grandpa, he died in ‘54, and it was a couple years before I was born, as parents didn’t marry until fall ‘53. But, can you imagine on your feet working all day, taking care of your mother who lived with her, and growing a big garden and canning/freezing it all! Her children were grown, dad was the baby and was 25 in ‘56, but grandmother made the best canned vegetables, and almost any type of fruit jams/preserves, hand pies, biscuits, homemade coconut cake, etc.! When she remarried about ‘64 she was only 42, and he grew peanuts out on some land close to a pond. Mack as he was called, grew the best raw/roasted peanuts 🥜… loved them!

We use tallow in a skillet and dip the corn tortillas in the very hot tallow for about three seconds. This process helps soften the tortilla and seals them so they don't come apart. We use this process when we make enchiladas too. There are some very good Mexican cooking on you tube. My most favored one is the two sisters, Las Donas. They make food like my great great grandmama. For me (70 years young) that's all I eat now days. We use black beans also, it's our most enjoyed dish in this home. You do an awesome work of love in your kitchen. You can see it in your videos. Your family shows their love for you. Thank you for sharing your life with us. Love to all in Jesus, Amen.

Green beans is the first thing I ever grew as a child. So easy. The do all the work on their own. Now all I can think of is stewed green beans. It is just about the only way I eat them. A little bacon and whole stewed tomato's and green beans all cooked down together is so good. And the only other way I love them is a Chinese dish with sliced pork and green beans , garlic and black bean sauce. So good over rice.
LOL the old fast food. Are you old enough to remember Chun King egg roll appetizers? They are like today's Totino pizza bits, but fill with minced chicken and asian mix vegetables. They were so good but no longer excist.
