Be very aware about the tax law in your area!!! For example I have the education and experience to be a rover for cats during their family travels, I have the space and desire BUT if I make it only for the weekends the taxes I'll have to pay make the whole thing too expensive so someone to wants to pay me. After the hard work I'll have to put in, the government charge is way too high for side hustle income.
Also I have a friend who has to live in small space after divorce, she was selling her books and handmade art collection, because of no space to keep them anymore, and guess what, even this was her attempt to declutter in more ecological way the tax serves catch her and forced her to pay as a side hustle.

What are your thoughts on food trucks?
With any type of start up, my thoughts are keeping your investment and overhead as low as possible. I'm not a fan of going into debt - not even for business. So if you have the money saved up to purchase one and you have a great idea (and can cook), it sounds like a great idea.
Investigate thoroughly. In addition to start up costs, there are also often licensing and inspection requirements. You also need to know when and where to park for the best exposure. My advice would be to talk to multiple truck owners before taking the plunge.
