My fam used to cook rendang mixed with pieces of pineapple, and curry powder .... eat this rendang with fried chili paste (sambal) and hot white rice .. also with fresh pieces of cucumber. We used to eat this during the celebration of ied mubarak. Yummy!
Paste can also add..
5 cm fresh ginger
5 candle nuts
Rendang is probably the most flavorful dish I've ever made.... No I'm not Indonesian or Malaysian or even Asian, so I don't say that I've done it "the traditional way", but it's just a joy to make and to share

Rendang is originally from Padang, west Sumatra and i am so thankful they created rendang cus i love it sooo muuchhh 🤤🤤
Hello Marion, thank you so much for showing us the recipe. The rendang was very tasty and delicious.
Had to modify the recipe a bit with the ingredient I had in my kitchen, but it turned out very well, especially for someone who has never tasted rendang before.
For the Rendang Paste:-
11-12 dried Kashmiri red chilies
2 lemongrass stalks, white part only, bruised, finely chopped
5cm piece galangal, peeled, roughly chopped
5cm piece ginger, peeled, roughly chopped
2 Shallots roughly cut
4 garlic cloves, roughly chopped
2 tsp ground cumin
2 tsp ground coriander
1 tsp salt
Curry:-
1 tbsp vegetable oil
1 whole star anise
6 green cardamom pods, bruised
1 stick of cinnamom
Added the curry paste
13.5fl ounce / 400ml of coconut milk
2 lemongrass stalks from the earlier lemongrass I used
1 Tbsp brown sugar
2 Tbsp Tamarind paste
0.25 cup grated coconut, roasted
1 Tbsp fish sauce (forgot to put last time)
6 kaffir lime leaves (didn't use them)
1Kg - Beef stew pieces (didn't saute/brown them. just added them in the sauce)
Cooked for nearly 2-2.5hrs after which I went ahead and reduced the curry till I dark brown color.

you missed turmeric leaf, that's essential in curry making in indonesia, at least the minangnese version which is where rendang comes from .. also adding ginger and a little bit of turmeric take this dish to the next level ... and cooks it a little bit more until it turns almost black dark brown-ish color, gives it caramelised and smoky flavor.... thank you for making this dish .. :)
My mom told me whenever we use coconut milk in dishes, oil is necessary so that the dish doesn’t go sour too soon. Day-old rendang tastes better.

U dont need to put "most" before "best" word
Honestly to make the paste even BETTER! What I like to do is put everything in the food processor, pulse until fine and then transfer the paste into a mortar and pestle and pound until I get a really fine smooth paste. So that it's less work on your hands when everything has been pulsed in a food processor. I know this is more work and more washing but I think its really worth doing!!!

I've been promoting Indonesian Cuisine since 2010 in Toulouse,France..their favorites are rendang,nasi goreng and gado-gado. Indonesian beef rendang is one of delicacies you should try when visiting Indonesia.
Thank you for making rendang this authentic way. Thank you for your research and effort!! Fantastic! Makes me wanna cook it. Normally people don't make rendang with the bone but it is even better on the bone because of the flavour from the bone (like a stock). I love eating it with glutinous turmeric rice (nasi kunyit/nasi kuning) garnished with fried shallots.

Agree! Marion's spicy miso braised eggplant is one of my go-to recipes! I add pre-fried mushrooms to it near the very end of the cooking time. Delicious served on rice with crunchy cucumber salad on the side! Yum! I have rendang gently bubbling on the stove right now. :)

Cooking With Greg sure! Use any white rice you like. Rinse until water is clear and the sub coconut milk and a little bit of water. Add pandas leaves and cook as per instructions. My gran likes to add a little salt when cooking the rice but I don’t really notice the diff so you can season ahead as per your taste. Enjoy!
Thats not curry, but Rendang. Actually Rendang also has some varieties.

Rendang is not curry if u want to eat curry rendang its called kalio different variation of rendang not the original rendang
Rendang is PATIENT, when its done, patient turn into satisfied....
A tip from my mom, don't waste your rendang oil. Keep it for your nasi goreng.

I made this two weeks ago and shared it the next day with collegues for lunch. I didn´t know one was a vegetarian and she didn´t take any. The others, including my manager, took several servings so I guess it was yummi and I did a good job. I cheated as I didn´t have a blender I used curry paste from a rendang package. In addition I added all the other ingredients as I had 2 kilo beef short ribs. I substituted soy sauce for the fish sauce. I will reduce the salt and add red chilli oil instead of the dried long chillies. We will see how it taste in 3 hours.
Try adding just a little bit of clove, cinnamon, nutmeg, and turmeric. Rendang is a fav in my family

Plain rice would be excellent! Rice is rather bland, it compliment the richness of rendang

U can save the paste in the fridge and use them when u need to make rendang. But of course cook the paste first

Most of traditional Indonesian cuisines doesn't use fish sauce. But this recipe is your version of rendang, actually I'm kinda curious how it turns out with the use of fish sauce.
This looks delicious! Question: At the end when you're removing the lemon grass and star anise, do you remove the kaffir lime leaves too? That's the one where you have to remove the stem right? It looked like you put them in whole, so I was wondering
Cari Guida it's honestly not even supposed to contain kaffir lime leaves lol. If you want an authentic Indonesian version, that is.
I could be wrong, but I think she said they were cardamom leaves not kaffir 😊
(Which she explained you can remove - however she personally doesnt mind biting into them as they have become quite soft)
@@Luxmundee Beef Rendang uses kaffir lime leaves indeed. I normally put in like 7 pieces of it for a kilo of beef, thats what my mother taught me...and she is originally from west sumatra, where beef rendang is origined.
some people eat that kaffir lime leaves with their rendang (me for example😊) its completely edible. But if you dont want to eat it you can always leave it aside. And also it is a rather hard thing to do to look for those leaves in you rendang, so we normally let it in and if we find one during our meal time we can always put it aside..

Sorry that is not Rendang it's called Kalio (similar with curry) second phase from cooking Rendang from Gulai -> Kalio -> Rendang. 🙏
