  • Coconut Rice is a traditional rice preparation of south India. Cooked/ steamed rice added with fresh grated coconut, curry leaves and some spices.

    ingredients
    6 cup boiled rice
    1 cup cahsewnuts
    1 tbsp channa dal
    6 number chopped ginger
    2 tbsp coconut oil
    1 tsp cumin
    5 leaf curyy leaves
    2 cup grated coconut
    1 number green chillies
    hing optional
    1 tsp mustard seeds
    3 piece red chilli
    1 to taste salt
    1 tbsp sugar
    1 tbsp urad dal
    Directions
    • cook rice seperately make sure it is fulffy
    • Heat ghee in a pan.Add cumin,mustard ,red chilli whole and saute till the aroma is released. Now add the channnadal,urad dal ,gr chillies,ginger curry leaves cashew nuts, and saute till soft.Then add the coconut grated and sugar.Gently stir
    • Then add the rice and fry for 2-3 minutes .chech seasoning .Stir well and adjust
    .Serve hot.

    50 years from now we had still be making coconut rice the same way! Great lessons learnt on how to temper, the order of the spices. Will be useful for not just this but anything you make.

    I really like the fact that you use your hands to cook without fear. That way one can enjoy the cooking experience. Adding masalas and salt with hands, and mixing rice with hands etc make your videos so much better than others'

    Chef.. as you rightly said... better to use freshly grated coconut and not coconut powder....then why to fry the fresh coconut and loose it's juice...? I learnt from my mother to use the freshly grated coconut directly to the rice and add the tadka to it. It will be heavenly to borrow your phrase!

      You can use normal coconut oil any brand (Not perfumed hair oil )

    Dear Chef. Over here, we cook our rice differently. For instance, after we stir fried the spices & basic ingredients, we will add in the uncooked rice & stir it thoroughly. Then we will transfer it into the rice cooker, add in water + coconut milk & let it cook like a normal rice cooking. That way the ingredients will be soaked into each & every grains of rice and end up with a much , much rich flavour. Same technic used for cooking of tomato, chicken or bryani rice etc.

    in the recipe he said coconut oil and the list put Ghee butter ???? In the video said coconut powder and the recipe put 2 cup grater coconut ??? soo which one you use

      You can use coconut oil or ghee. I've used both; sometimes coconut oil, and other times ghee.
      You can also use, freshly grated, or powdered coconut in the package.

      You can have this with any kinds of sabjis, bhartas or chokas, pickles and chutneys.
      IF you do eat meat and fish, you can fry fish or chicken, or both.
